NEWS FROM SUNSHINE CARE ~A MEMORY CARE COMMUNITY Issue 255 June 2017 A Memory Care Community 12695 Monte Vista Road Poway, CA 92064 858-674-1255 Resident of the Month Mildred Miller Mildred Miller, better known as Millie, graduated from Bellflower High School in Southern California. She married her husband, Andrew Peter Miller, at the sweet age of 18 and had three children; Sandra, Jade and Cleve. Millie is a wonderful mother and was great at raising her children while her husband had many careers. Millie was always willing to relocate wherever her husband s post-navy pilot career took him. The family moved several times over the years, eventually settling in Southern California. While living in Long Beach, Millie became a runway model which is still evident in the way she walks and carries herself. She learned to water-ski and even competed with ski teams doing acrobatic moves. With the kids in grade school, and her husband working at JPL near Burbank, the family settled into Millie s dream home in Altadena. As the kids grew older Millie decided to spread her wings again, going to work at Hertel s Dept. Store in Pasadena. Millie s sales experience then took her to a beautiful, and busy flower shop in Pasadena and from there she became a successful real estate agent. Millie always remained supportive as her kids lives She moved to Baja, near her daughter Jade and her grandchildren, who all adore her. When Millie moved back to California, while living on Lido Island in Newport Beach, she again made her home into an adventure for her grandchildren. Millie retired with her husband to Warner Springs. They both remained active Millie has always been fun, smiling, and gracious. She could also be a little devious at times and play fun practical jokes on her friends. Millie s children are very happy that she is now living at Sunshine Care, they feel that she is safe and has plenty of activities to keep her busy with many opportunities to interact with other residents. Sunbeams June 2017 Page 2 Employee of the Month Alex De La Rosa Alex was born on November 23, 1975 in Acapulco Gerrero, Mexico. Alex has four brothers and two sisters and is the second eldest child. Alex migrated to California in 1994. He met his wife Mirna in 1996 and they married in 1997. They have been happily married since and have two sons: David and Sebastian. Prior to working at Sunshine Care, Alex worked at Pala Resort & Casino as a Café crew for about five years. He started working at Sunshine Care in November 2014 as a Kitchen Assistant. When asked what he likes most about his job here at Sunshine Care, Alex response was, I really enjoy making and preparing food for the Residents with great passion and I like to always do my best. On his days off, Alex enjoys watching sports, going out to parks and beaches, and going to church every Sunday with his family. Some of his favorite foods include Italian and any kind of seafood and his favorite dessert is any kind of ice cream. Alex is a very flexible and reliable employee. He always has a big smile on his face and is always willing to lend a helping hand. Congratulations Alex and keep up the great work! Sunbeams June 2017 Page 3 GARDEN GATE Hey There Fellow Gardening Enthusiasts! Spring is in full swing here in the gardens at Sunshine Care. Our warm season crops are finally kicking in and should be in full swing by mid June. We started picking some cucumbers, squash, bell peppers and of course the star of the show -TOMATOES- The King of the Spring Garden. Thousands of pounds of fresh tomatoes will find their way to the kitchen over the next couple of months. Then the production will level off until the really cold weather arrives in December. Even though the bulk of our tomatoes were planted after the last frost of the year, and are enjoying the beautiful spring climate, don t forget to plant some more tomatoes in the month of June. We will plant a couple of rows at the first of the month then some mid June and finally the last couple rows will go in around July 1 st. This will ensure a steady supply of tasty tomatoes through the holiday season. Bottom line- even though spring and summer is a dynamic time of year for tomato production, stagger your plantings through June to maximize the time you can enjoy the flavor of fresh vine-ripened tomatoes. This month s free garden lecture topic is Ferntastic Platycerium with our speaker Gayle Olson. She is a local Staghorn Fern expert and we will learn how to divide and mount Staghorn ferns. A power-point presentation will enlighten us on how to care for the many types of these amazing epiphytes. Farmer Roy Tomato Basil Salmon Ingredients: 2 6oz boneless salmon filets 1 Tablespoon dried basil 1 tomato thinly sliced 1 Tablespoon Olive Oil 2 Tablespoons grated Parmesan cheese Provincial Tomatoes 2 large tomatoes, cut into 1/4 inch slices Salt & Pepper to taste 1 Tablespoon Olive Oil 1/2 cup grated Parmesan Cheese 1/4 cup Asiago Cheese 1/4 cup dry bread crumbs 2 Tablespoons dried parsley Directions: 1. Preheat oven to 375 degrees F (190 degrees C). Line a baking sheet with a piece of aluminum foil, and spray with nonstick cooking spray. Place the salmon fillets onto the foil, sprinkle with basil, top with tomato slices, drizzle with olive oil, and sprinkle with the Parmesan cheese. 2. Bake in the preheated oven until the salmon is opaque in the center, and the Parmesan cheese is lightly browned on top, about 20 minutes. Directions: 1. Preheat your oven's broiler. 2. Place tomato slices in a single layer on a baking sheet or in a baking dish, season with a little salt and pepper, and drizzle with olive oil. Mix together the Parmesan cheese, Asiago cheese, bread crumbs and parsley; sprinkle over the tomato slices. Drizzle a little bit more olive oil over the top. 3. Broil for 5 minutes, or until the top is golden and toasty.
