BEEF AND VEAL Veal and pork we only obtain from Central Switzerland and from establishments which have committed themselves to Animal Welfare. Our master butcher knows all the producers in person. EGGS & CHEESE Swiss free-range eggs are obtained from our supplier, which is responsible for the appropriate keeping of chicken and for a careful processing of the products. For our desserts and pasta we use pasteurized egg products. Our goat, mountain and alp cheeses are from the Cheese factory Odermatt in Dallenwil and from the Oberberg cheese factory in Schüpfheim in the middle of the UNESCO biosphere in Entlebuch. VEGETABLES & FRUITS Farmer Sepp Muff from Schwarzenbach in the Michelsamt supplies us with seasonal fruit and vegetables from regional cultivation. From the Gmües Mattli in Kastanienbaum we obtain saisonal vegetables and salad from an elaborateness cultivation. In addition, we purchase products from Swiss farming by the company Rölli in Lucerne as well as European delicacies. BREAD Fine baked goods and bread are obtained from the Bakery Barmettler from Stans. WATER Our cooking water comes mainly from the Lake Lucerne.
