We are thrilled to have so many members and visitors joining us. We have a full agenda of activities coming up in the next few months. Please review the newsletter to see what is going on, and find opportunities for participation. Mark your calendars for the second week in March. We have a full week of activities planned for you. We encourage you to get involved and to stay involved with PCWNC. D Ann McCollum Raggadyann@hotmail.com CINNAMON: Adding cinnamon ½ to a heaping teaspoon to a sweet dish causes a slower rise in blood sugar. The spice enhances insulin sensitivity, allowing you to use more glucose in your blood, thus keeping blood sugar levels stable. Adding cinnamon to starchy/carbohydrate-heavy foods may also help stabilize blood sugar after you eat. Use: Sprinkle on cake, cereal, or latte. Work cinnamon into starchy meals, like rice or grain dishes, by grinding together cumin, coriander, and caraway and adding chopped nuts or dried fruit for a Mediterranean dish. HOT SAUCE: Eating just one meal that contains capsaicin the compound that gives hot sauce and chili pepper their heat not only reduces the level of hunger-causing ghrelin but also raises GLP-1, an appetite suppressing hormone. Scientists have found that people who drink capsaicin-spiced tomato juice before each meal over two days ingested 16% fewer calories than those who drank it plain. Use: Splash on tacos, brown rice, or low-fat tomato or lentil soup. Hot sauce also pairs well with citrus. Top a half of grapefruit with a few shakes, plus a teaspoon of brown sugar. POSTAGE PAID WEATHERFORD, TX PERMIT 81 Return Service Requested February 2011 VOLUME 13 Issue 6 Carla Kerr, Editor 406 Charlie Way Weatherford, TX 76087 817 594 2552 cckerr@att.net pcwnc.org PCWNC P O Box 362 Weatherford, TX 76086 Bon Appétit, Y all Roasted Butternut Squash, Spinach and Bacon Salad 4 appetizer sized portions or 2 dinner sized portions 4 cups butternut squash, peeled, seeded and cut into 1-inch cubes 1 Tbsp. olive oil Sea salt Freshly cracked black pepper 2 slices bacon crumbled 5 ounces baby spinach Apple cider vinaigrette, recipe follows 2 ounces goat cheese, crumbled l. Preheat oven to broil. Roast butternut squash on a foil-lined cookie sheet (for easy cleanup). Lay out squash and drizzle with olive oil. Toss with your hands making sure all pieces are evenly coated. Sprinkle a bit of sea salt and pepper over all. Place in oven for 15 minutes, checking and turning pan if necessary. Remove when edges start to brown. 2. Assemble salad. Put spinach in large bowl, add warm squash pieces (see note) and bacon. Drizzle some of the vinaigrette on top and toss. (You may not need all of the vinaigrette.) Add goat cheese and serve. Note: Squash pieces can also be room temperature or cool. Feta or blue cheese may be used instead of goat cheese Apple Cider Vinaigrette: 1 shallot minced, 1/4 cup apple cider vinegar, 1 Tbsp grainy mustard, 1/2 cup grape seed oil, sea salt and freshly cracked black pepper. In small bowl or jam jar, add minced shallot, apple cider vinegar and grainy mustard. Mix together and let rest for 10-15 minutes. Add grape seed oil and a pinch of sea salt and pepper. Taste for additional seasonings. Sue Stephens
