MANOIR MURISALTIEN is located in Meursault, the "Land of the Great White Wines", and is undoubtedly the home of one of the best and most renowned white wines throughout the world. As a matter of fact, the people from the village of Meursault are known as Murisaltien and their history has always been linked to some extent to winemaking and wine drinking! Manoir Murisaltien offers a complete range of the finest Burgundy wines. As a wine negociant, we are in a position to choose only the best grapes (reds) Gold must (whites) to conduct ourown vinification, maturation and bottling. Given that the quality of the wine starts in the vineyards, we are paying particular attention to the irreproachable quality of the fruit that our vineyard owners partners grow. Our wines are fully reflecting the harmony of the grape variety, vintage, climate, soil and know-how of our wine-makers. We know our Terroirs and we do everything both in the vineyards and in the winery to offer you only the best. Burgundy wines are unique. We want to make sure that they remain unique: our daily concern is therefore to outline the specificity, originality and uniqueness of each of our wines. The Climats of Burgundy become UNESCO World Heritage The climates are precisely delimited vineyard parcels on the slopes of the Côte de Nuits and the Côte de Beaune south of the city of Dijon. They differ from one another due to specific natural conditions (geology and exposure) as well as vine types and have been shaped by human cultivation. Over time they came to be recognized by the wine they produce. This cultural landscape consists of two parts. Firstly, the vineyards and associated production units including villages and the town of Beaune, which together represent the commercial dimension of the production system. The second part includes the historic centre of Dijon, which embodies the political regulatory impetus that gave birth to the climats system. The site is an outstanding example of grape cultivation and wine production developed since the High Middle Ages.
Our Philosophy: Quality Respecting Terroir The vine is taken care of under rigorously controlled conditions according to the Burgundy tradition, in order to obtain the best grapes. Moreover, we follow consistently and intensely the vine of our suppliers to vinify the best vine products. The cultural methods are essential to the selection of partners, in whatever climate they are growing. All our wines are made according to the Burgundy tradition. Our white wines: after a soft pressing of grape berries, the must ferments directly in oak barrels over 8 days. We use only in French oak casks with a renewal rate of 30 % every year. The malolactic fermentation starts naturally in spring in response to the natural rise of the temperatures in our cellars, which have a perfect temperature and hygrometry for wine maturation. The culminating process consists of ageing our wines on selected lees. The fermentation temperature, between 16 and 22 C, will be the main factor affecting the end quality of our wines.
Our red wines: after a strict selection of the grapes, they are destalked (on average from 50% to 100% in order to obtain red wines more silky due to delicate tannins). During the maceration of must and skins, fermentation will continue and last between 6 and 8 weeks. As soon as fermentation is finished, the wines are put in oak barrels at a rate of one third new barrels for each crop, and then begin aging in our XVII th century cellars, the perfect environment for maturation and preservation of wines. The maturation process consists of aging the wine in oak barrels preserved of air. This process starts as soon as alcoholic fermentation is over. Our wines will be matured with malolactic fermentation and will be maintained on lees. This aging process will incite a slow clarification and maturation of our wines. With the high quality of our raw materials, we can keep fermentable lees to extend the aging process, which protects wines against oxidation. We will then have wines with subtle aromas, richness, roundness and finesse. The ageing process lasts at least 10 months for the whites and 18 months for the reds, depending on the Crus.
