President s Message Tony Reyes Dear Members, As the year comes to an end, I reflect on how grateful I am to be part of this organization. During the year I ve made new friends and became closer to others. I ve shared smiles, sailing adventures and laughter with many of you. While I look forward to the coming year, I remember those who won't be joining us on life's sailboat anymore. I am honored to have met them and will remember them each time I set sail. During the holidays we can still enjoy the greatest gift this organization provides to us, the gift of friendship. It is a time to reach out and connect with the people you've met and laughed with during the sailing season. During the winter time, we should be reaching out to one another and making sure we are doing fine. Call one another during those cold days and start planning social outings with one another. It is a perfect time to review and renew life's bucket list. In closing, I quote Sir Francis Drake "It is not that life ashore is distasteful to me. But life at sea is better." Tis the season of giving please consider volunteering for one event! Are you willing to step up to organize the February Dinner Meeting at a restaurant? We generally gather for drinks and appetizers with an option of staying for dinner. Speakers are an integral part of SUS educational opportunities. A few members have volunteered to find a speaker for one of our Program Meetings. Do you know a someone who would make a presentation on a subject that would interest our members? Ideas for new events are always appreciated. Some suggestions include a beach party, barbeque, new meetup ideas. If you are willing to plan a new get together. Food For Thought and Sailing A favorite on SUS sailing events INGREDIENTS Leisa s Corn Bean Salsa Contributed by Leisa Bell 3 ears of corn 1 green bell pepper, diced 1/2 cup red onion, diced 1 15.5 ounce can black beans, drained and rinsed 1 tablespoon parsley flakes 1 tablespoon white vinegar 3 tablespoons lime juice 1 1/2 teaspoons cumin 1 teaspoon iodized salt 1 teaspoon ground black pepper 1/2-3/4 cup olive oil DIRECTIONS 1. Grill the corn for 2-3 minutes on each side until corn is cooked. Remove from the heat and allow it to cool at room temperature for 5 minutes until it is cool to the touch. 2. Once the corn is cool, cut the kernels off the cob and place them in a large bowl. Discard the cobs. 3. Add the diced bell pepper, diced onion, black beans and parsley flakes. 4. Pour the vinegar, lime juice, cumin, salt and pepper into a small bowl. 5. Gradually whisk in the olive oil. 6. Mix the vinaigrette into the corn mix and add salt and pepper to taste. Variations: add chopped tomatoes, avocado, olives, tricolored peppers, fresh parsley DO YOU HAVE A RECIPE TO SHARE? Next year, I want to encourage all members to submit articles, notes, recipes, and photos to share with SUS membership in The Masthead.
