Born in the southern Thai city of Trang, Chef Samrit enjoyed a childhood infused with the cuisine of the region. Renowned for locally grown produce and bountiful fresh seafood from the Andaman, Trang is a hub for distinct flavours, food festivals and signature Thai sweets. Chef Samrit s family of restaurateurs were famous locally for their specialty desserts of Kanom Por Pia and Trang Cake. Southern Thai dishes are among the hottest in the country; sharp and intense, they are heavily influenced by flavours and spices from Indonesia and Malaysia. Samrit has always been inspired by the recipes of his region. He treasures the age-old art of making curry pastes from scratch. It is this attention to detail and respect for the art that he brings to Mai Pai. Named for the bamboo that has been used and respected by Thai people for centuries, our restaurant celebrates the traditional favourites, seasonal specialities and the secret recipes of the south.
