The chicken is then flamed with whiskey and finished off in the oven. Served in a sauce of mushrooms, ham, brown stock with a touch of Eberhard's cream. CHICKEN PICCATA Chicken breast pounded thin then dipped in seasoned flour and brushed with a light egg wash. Seasoned with fresh herbs and parmesan cheese, then quickly browned in olive oil. Garnished with a lemon flavored sauté of onion, capers and mushrooms. CHICKEN PENNE PASTA A creamy sauce of mushrooms and bacon tossed with penne pasta and sautéed spinach. Topped with a piccata-style lemon chicken breast and finished with black pepper and asiago cheese. 4

DINNER SAUTÉED CHICKEN W ITH POLENTA Cubed breast of chicken marinated in dry marsala. Sautéed in olive oil with mushrooms, ham and onion. Finished with a light cream sauce of marsala, basil and oregano. Served with polenta. CHICKEN SANTA FE Chicken seasoned with chili peppers, grilled and dressed with a smoky red enchilada sauce. Finished with pepper jack and cheddar cheeses, served over a bed of red beans and sautéed summer squash. CHICKEN CORDON BLEU Chicken breast filled with a mousseline of ham, egg, and Swiss cheese. Dipped in a light egg wash, dredged in bread crumbs then sautéed and served with a veloute volaille sauce. FISH ENTRÉE SELECTIONS +$1.00 PER PERSON MAPLE BRINED & SMOKED SALMON Filet of salmon brined in lemon, garlic, maple syrup, and other flavorings. Pan seared to a smoky finish creating a beautiful crisp glazed surface. CHINOOK SALMON IN FOUR PEPPERCORN CRUST Salmon filet topped with a mixture of garlic, lemon and black pepper, forming a savory crust when broiled. Served with a reduction of white wine and white wine vinegar seasoned with garlic, black peppercorns, shallots, fresh thyme and finished with Eberhard s cream and butter. BROILED CHINOOK SALMON Fresh Oregon coast salmon filet broiled with lemon and fresh chives. Served on a bed of grilled seasonal vegetables and roasted Yukon potatoes seasoned with a light basil vinaigrette. 5

Served on a bed of sautéed apples with a drizzling of seasoned pan sauce. CLASSIC BEEF STROGANOFF A sauté of tender cut top sirloin and mushrooms. Seasoned with red wine, garlic, onions and served over handmade pasta. Dressed with a rich brown sauce touched with a taste of Eberhard's sour cream. BEEF SCOTCH TENDERS Slowly simmered beef with a hearty vegetables in a brown stock. Drizzled in a deep red wine and brown roux. VEGETARIAN ENTRÉE SELECTIONS VEGETARIAN ENCHILADAS Corn tortillas filled with sweet peppers, tomato, sour cream and almonds. Finished with a green picante sauce made with fresh roasted peppers and tomatillos. VEGETARIAN LASAGNA Handmade pasta layered with roasted vegetables, fresh tomatoes, ricotta, mozzarella and parmesan cheeses. The Bolognese sauce is seasoned with oregano to perfectly finish the dish.
