This brie has been selected especially for Mum and won t disappoint. Produced just outside of Paris it has an impressive maturing process equally as impressive as its taste. It is specially matured on rye straw mats in local caves for two months which in turn rewards us with a unique, crusty, yeasty rind and unctuous texture. The wonderfully yeasty rind also helps to develop more flavour in this typically mild cheese. The flavour is characterised by deliciously earthy and mushroom undertones yet is noticeably sweet and fruity. Luscious, buttery, smooth and creamy there is nothing Mum won t love about this cheese & it pairs exceptionally well with crusty bread, and Apple and Rosemary Jelly.
Country of origin : Switzerland Milk type: Cow s milk Gruyere Pair with: Riesling, Pinot Noir or Sauvignon Blanc Loved not only by the population of Switzerland but also my Mum, Gruyere is one of Switzerland s best-known cheeses. Made from the freshest milk of Fribourgois cows there are strict rules surrounding the animal s diet because of the resulting impact on the flavour of the milk produced, and therefore the cheese. During the maturation Gruyere is salted, rubbed and turned daily for the first 8-12 days before being matured for a minimum of 5 months, but up to a maximum of 16 months. During this time the cheeses are washed regularly with a brine solution. Gruyere has a butterscotch coloured pate with a firm, dense, and slightly flaky texture that is often studded with small, slightly crunchy granules. On the palate you will notice an initial complex balance of sweetness and saltiness that reveals a deliciously nutty, caramel flavour with notes of mushrooms, hay and fruit.

Country of origin : Australia Milk type: Sheep s milk Charlton s Choice Blue Pair with: Cabernet Sauvignon, Semillon, Wheat Beer This unique ewe s milk cheese is made by Artisan cheese maker Barry Charlton from Berry s Creek Cheese. A natural rind cheese with a beautiful white ivory pate and pockets of blue green mould within the interior. The cheese is heavily veined and has been aged for 3 4 months to allow it to develop its lovely rich flavour. Although this is a mild blue, it is rich in flavour. It provides a fantastic lingering full mouth taste that is somewhat reminiscent of gorgonzola. This cheese is robust, nutty and absolutely delicious - a perfect marriage between the distinct flavours of sheep s milk with those of the blue.
