Chef Yoda s Rainbow Salad One Benefit Your name would look great here! ave a recipe named after your organization printed in our Recipe Book. Fresh Peach Berry Crisp Directions Directions Directions 1 cup quinoa Selection of seasonal vegetables Suggested: peas, beans, beets, corn and carrots. Zest and juice of 2 lemons 2 tbsp Olive oil Fresh herbs tarragon and parsley Salt and pepper to taste 1. Prepare vegetables. 2. Leave the peas and carrots raw, blanch the beans, and boil the corn and beets. Peel the beets after they are boiled. Using a sharp knife, cut the cooked corn off of the cob. 3. Cook quinoa according to package instructions and strain. 4. When still warm, add cooked or raw vegetables, and toss with lemon juice and zest, olive oil and herbs. 5. Add salt and pepper to taste. 6. Serve warm or cold. FILLIN 3 large Ontario peaches, chopped 1 pint Ontario blueberries 1 tbsp all purpose flour 1/2 tsp vanilla 1/4 cup sugar TOPPIN 1 1/2 cups large-flake rolled oats 2/3 cup packed brown sugar 1/4 cup butter, melted 1/2 tsp vanilla 1/2 tsp salt 1. Preheat oven at to 375 F. 2. In a mixing bowl, stir together peaches, blueberries, flour, vanilla and sugar until well combined. Spoon into greased 8 cup (2 L) baking dish. 3. For the topping: In the same mixing bowl, stir together oats, sugar, honey, butter, vanilla and salt; sprinkle evenly over the fruit. 4. Bake in the preheated oven for 40 to 45 minutes or until fruit is tender and topping is browned. Serves 4 to 6.

This year each chef made three quick dressings using different flavoured vinegars and citrus fruits. These dressings got one student, named Wolf, pretty excited! is homework was to invent a salad dressing after the class visit.
