The meal was the best and a great time was had by all. It couldn't have come together without everyone s help. APRIL EVENTS Social Club Meeting 7pm April 6 - Pool Party - Starts at Noon and music from 1pm till 5pm Wear your swimsuit and bring your towel to the pool for a fun day of swimming, eating and music. The social club will provide ribs and chicken. Bring a dish to share. There will be a sign up sheet in the clubhouse. Please indicate how many are coming and what you are bringing. Guests are $5. Entertainment will begin at 1pm by Red Duo and food will be served at 12. April 8th - Soup Supper followed by Board Meeting 7pm Cost is $4.00 pp - pay at the door. Menu: all the homemade soup you can eat rolls desert This is a first come, first served - until it s gone. Come enjoy a great meal with your friends! April 9th April 16th Ladies Luncheon at Get Hooked Mens Breakfast at Rams April 21st. Easter Dinner. 2pm. Ham, potatoes and a vegetable will be provided for by the Social Club Bring a dish to share. There will be a sign up sheet in the clubhouse. Guests $5 Please be sure to indicate how many are coming and what you will be bringing. April 27th - Goodbye Snowbirds. Free Breakfast. 8:30-9:30am. E A S T E R C A N D Y Deviled Eggs with Bacon P O P C O R N INGREDIENTS: 10 Cups of Popped Popcorn 3 tbsp. Butter (Sweet Cream, Salted) 3 cups Mini Marshmallows Handful of Mini Marshmallows Bunny Mix M&M s Hershey s Milk Chocolate Candy Coated Eggs Ingredients 18 eggs 1 teaspoon spicy mustard 1 tablespoon yellow mustard 1/2 cup mayonnaise + 1 tablespoon 1/4 teaspoon pepper 1/4 teaspoon salt dash of cayenne pepper or paprika cooked bacon Melt 3 tablespoons of butter in a medium sauce pan. Once the butter is melted, add 3 cups of mini marshmallows. Stir until the marshmallows are melted. Turn off the heat as soon as the last marshmallow has melted. you can add 1 tsp. of vanilla to the melted marshmallow mixture at this point The amount of marshmallow mixture you want to add is really up to your own taste. The more you add, the stickier the popcorn will be so add it a bit at a time, stir the popcorn and give it a taste before you add more. Leave a little bit of the marshmallow mixture for the next step. Now pour the popcorn onto a cookie sheet covered with foil. Drizzle a little bit of the remaining marshmallow mixture over the popcorn but do not mix it up. You will need the mixture at the top so the candy will have something to stick to. Mix M&M s & Hershey s Candy Coated Milk Chocolate Eggs to the Easter Candy Popcorn. Once the popcorn is covered in marshmallow mixture it is time to add the candy. But don t wait too long. You want the marshmallow mixture to still be warm and sticky. Sprinkle the candy onto the popcorn, concentrating on the areas with the most drizzled marshmallow mixture. Allow the Easter Candy Popcorn to cool. Break apart into pieces and serve Instructions Place eggs in pot; cover with water. Bring water to a rolling boil and boil for 9 minutes. Run cold water over eggs until cool enough to touch; drain water from pot. Peel eggs under running water; dab dry with paper towel. Cut eggs in half lengthwise; gently scoop yellow yolks into medium size bowl. Mix in mayonnaise, mustards, and spices. mash well with fork. Spoon mixture into quart size ziplock bag. Cut small hole in corner and squeeze out mixture into egg white halves. Sprinkle with paprika or cayenne pepper and add bacon to the top. Pea and mint soup with ham 50g butter 1 large onion 1 finely chopped garlic clove a few sprigs of mint 1 litre hot chicken or vegetable stock Instructions Melt the butter in a pan. Add the onion, garlic and a few sprigs of mint. Cook for 5 minutes, stirring frequently Add the stock and three-quarters of the bag of frozen peas, partially cover and bring to the boil; simmer for a couple of minutes. Remove the mint sprigs and leave the soup to cool for 5 minutes, then liquidise. Reheat the soup, stirring in the rest of the bag of peas. Season Divide the pack of ham hock into six. Serve the soup piping hot, adding a swirl of crème fraîche, some ham hock, mint leaves and a drizzle of oil 5
