A TASTE OF A PLACE, EXCELLENCE, GASTRONOMY Winery in organic conversion T the origin of Château Tourril is an ancient gallo-roman signal tower located on the top of a hill in Languedoc proving the 2000 years history of the wine estate since roman Antiquity. The 13 hectares family vineyard is nested in a clay-limestone corrie surrounded by Mediterranean guarrigue that protects the vines from dominant winds and frost. It lays between the famous 1000 years old fortified city of Carcassonne and the Canal du Midi, both on UNESCO s World Heritage list. Well shone upon and drained by rainwaters, it produces high quality AOC Minervois wines from our Syrah, Cinsault, 100 years old Carignan, Grenache and Roussanne grapes. The estate was bought by two passionate wine entrepreneurs, Ortwin Kandler, a former Airbus pioneer, and Philippe Espeluque, owner of a local construction company. Thanks to important investments over time, the vineyard has full control of its production with modern winemaking technology and sustainable agriculture. Ortwin s son, Stephan Kandler, has taken over the management in 2014; his experience in international high-level sporting events including America s Cup, and high-tech projects now help the company to grow worldwide. Our wine grower and oenologist are fully dedicated to produce authentic and quality long lasting wines: rich and concentrated reds, a light and fresh rosé, a white with a unique taste. We select the best grape lots in order to offer wines that respect the local millenary winemaking tradition, express the specificity of our soil and reflect the weather conditions. As a result, our wines have regularly received international awards (International Wine Challenge, Canada, Decanter, Languedoc & Roussillon TOP100) and have been listed in the main wine guides and magazines: Wine Enthusiast, Wine Spectator, Guide Hachette, Bettane&Desseauve, and are already exported to the USA, Japan, Korea, Germany and China Wine is a pillar of gastronomy and the best way to share with others. This is why we welcome our visitors for free tasting all year round in our unique cellar located inside the tower boasting 360 views and decorated with contemporary paintings and sculptures. We like to create culinary pairings, such as the one with France s best cheese monger Xavier, we offer new tasting formats (WIT) and we share all our news on the web and social networks. AOP MINERVOIS WHITE HELIOS 1 st organic harvest Roussanne 100% Degree : 13 The grapes are harvested quickly in the early morning to preserve the freshness of aromas. Winemaking in vats at low temperature and maturing on fine lees to give richness to the wine. This wine has delicate flavors of chamomile, white flowers, and baked quince. The mouthfeel is lush but also shows plenty of minerality before finishing with an impression of creamy orchard fruit. FOOD & WINE MATCHES Enjoy with baked fish dishes or on its own. AOP MINERVOIS ROSE HAVANA 1 st organic harvest Cinsault 70% Grenache 30% Degree : 13 The grapes are harvested early in the morning to preserve the freshness of aromas. Our Rosé is produced with the Saignée method in low temperature vats and matured on fine lees until the bottling. A brilliant pale peach color with a nose reminiscent of a strong summer sea breeze in a seaside citrus orchard. Citrus notes go from being shy on the palate to revealing a bouquet of grapefruit zest, rose water, and lime with a soft, refreshing finish. FOOD & WINE MATCHES Gambas a la plancha with herbs. Lamb chops with fresh fried vegetables. Drink chilled at 8 and 11 C.

AOP MINERVOIS RED PHILIPPE Carignan 40% Grenache Noir 30% Syrah 30% Degree : 13 The grapes are harvested by lot, at optimal ripeness. They are separated from stalks and separately matured to be aged in stainless steel vats for 6 months. Red wine with an intense ruby robe, balanced with blackcurrant, riped pomegranate and cherry aromas. This smooth wine has a warm final with silky tannins. FOOD AND WINE MATCHES Roasted turkey with sage Braised lamb shank with rosemary herbs Charcuteries and white méats Cheesemaker Xavier recommends a «Saint-Marcellin» half ripened cow cheese. AOP MINERVOIS RED PANATELLA Syrah: 80% Grenache: 20% Degree : 13.5 Coming from our best lots, the grapes are harvested ripened, then removed from stalks, crushed and put in separate vats to be matured at regulated temperature. The earliest the blending is made, the more the wood tannins will melt with discretion, elegance and refinement. Gleaming and deep purple robe. Beautiful intensity of candied black fruits. The wood, well sniped with a toasted and truffled final, allied with fine tannins, give all its elegance to this wine. FOOD AND WINE MATCHES Beef stew with rice Cassoulet and meat with sauce Cheesemaker Xavier recommends a «Pierre- Percée» half ripened cow cheese Drink ideally at 16 /17 C. Decant 1 hour before for an ideal tasting experience. 92

AOP MINERVOIS RED LIVIA 90% Syrah 10% 100 years old Carignan Degree : 14,5 This blend comes from a meticulous selection of our oldest grapes of Syrah, handpicked in small cases. It is matured at regulated temperature and after a maceration of 20 days with regular punching down of the grape marc cap (pigeage). It is then aged in new french oak barrels during 14 months. The wine is bottled after a refining in a vat to harmonize the barrels potential. Red wine with a deep and intense robe. The nose is complex : small red fruits, gingerbread and vanilla notes. The mouth is powerful, thoroughbred and sustained by finely coated tannins. With an exceptional length and depth, the ripe small red fruits, the white pepper, the light tobacco and the toasted notes give a generous structure to this wine. FOOD & WINE MATCHES Deer steak with Grand Veneur sauce. Tournedos Rossini and its season vegetables. Cheesemaker Xavier recommends a «Cantal» half dry cow cheese Drink ideally at 16 /17 C. Decant 1 hour before for the best tasting experience.

AOP MINERVOIS RED Château Tourril Rouge 25% Carignan 25% Grenache 25% Syrah 25%Cinsault Degree : 12,5 A blend of the most typical Languedoc grapes. Grapes are separated from stalks and separately matured in thermo-regulated stainless steel vats before being mixed for a 9 months ageing process. The wine is ruby-red. The nose is a balanced mix of red and black fruits. The mouth is smooth and soft at the beginning and structured and fruity at the end. This fruity & fresh wine can even been drunk fresh. Château Tourril has been selected by the organisation to become the official wine of the Vendée Globe 2016-2017, the No-stop Singlehanded Sailing Race around the World. After being the Official Supplier of the French America s Cup team «K-Challenge» and the Extreme Sailing Series, Château Tourril is associated again with a major event of this sport and its positive values : excellence, innovation, authenticity, achievement. Around the world via the three capes The course for the Vendée Globe illustrates the straightforward nature and simplicity of the idea behind this major event. You sail around the world from west to east via the three major capes of Good Hope, Leeuwin and the Horn. There is a long slide down the Atlantic, the perilous voyage across the Southern Ocean with firstly the Indian Ocean and its crossed seas, then the Pacific Ocean, the world s biggest ocean. Finally, there is the climb back up the Atlantic to head back to Les Sables d Olonne, which marks the start and finish of the Everest of the seas.
