I m not sure if I m more excited that summer is finally arriving or that school s out in two weeks. (I think the latter). It has been a challenge to stay inside! May always brings a new buzz of excitement as we finally get to see the green leaves on the trees and warmer weather that s here to stay! Here at the Homestead, we ve been busy planning our new building project (more info coming in future newsletters), and keeping everything in stock for our customers! a quick note... Can it really be? The year is flying by so swiftly! We think we ve officially made it through the slump of winter, and we are happy to feel spring s energy all around us! A feeling of hopefulness wells up deep inside when we see the green grass, trees budding, and birds singing their praises. Our creeping phlox are in full bloom, and the red buds glow in the bright spring sunshine. Tender rhubarb shoots are emerging from the warming earth, soon to be harvested and baked in flaky pie shells! The scent of freshly turned earth fills the country side, and tractors dot the evening landscape. My thoughts wend homeward this time of year, to a place near and dear to me the rolling foothills of the Kansas Flint Hills! Mid-April, the dead grasses are burnt off of the hills. Rows and rows of fire can be seen for miles, their glow lighting the horizon at night! I so remember this as a young girl driving through the ribbon of highway at night and seeing long rows of fire along either side! That left an impression! Of course, along with this spring excitement, came a concern for the safety of the farmers and ranchers. As the fires burnt their way across the span of dead grasses and fizzled out behind the crispy pastures, the miles of darkened acreage seem to stretch on and on, but just for a couple weeks! Then came the long-awaited anticipation of new life springing forth- bright green blades of grass, confirming the perfection of God s timing. With a few gentle spring rains, the hills were thick, lush and green again. Cattle were turned onto the hills to graze. Maybe it s one of those things that you just have to grow up with to appreciate. However, I count it a privilege to have been given the opportunity to grow up in the humble hills of Kansasout where most people think they ll find the yellow brick road. To me, it s one of the most beautiful places in the world! Fresh Asparagus Ham Quiche Our Fresh Asparagus Ham Quiche s are now available in our customer freezer. If you haven t tried one yet, it s a must! This savory breakfast dish is a great kickstart to any day. Talk about YUM! It serves 6-8 people. 2

She s extremely accomplished, being very involed in BPA and ranking high academically in her class (among many other things!). Danielle, thanks for always being a willing employee and treating our customers well! Truffle-stuffed Oreo Cupcakes yep, you heard that right! Amber just made these the other day, and they turned out AMAZING! Ingredients One package of Oreos 8 oz Cream Cheese 1 box of cake mix (your choice) Frosting (boughten or homemade) Instructions 1. First, preheat the oven to 350. Whip up a batch of 24 oreo truffles- no need to dip them! Just crush the package of oreos (save about 1/2 cup!) and combine them with warmed cream cheese. 2. Prepare your cake mix according to the instructions 3. Put in cupcake liners, and then fill batter just so it is covering the bottom. Place truffle in, then cover with the remaining batter. 4. Bake the cupcakes according to the cake package instructions. 5. Use your favorite frosting, or buy some-- just be sure to add 1/2 cup crushed oreos! Recipe taken from Love From the Oven. 3

May Sandwich of the Month May Smoothie of the Month Mint Oreo...Need I say more?! mmmm a creamy blend of Oreo cookies and cool peppermint flavor. Refreshing and SO delicious! (This is one of my personal favorites! I love it.) Box Lunches Roast Beef & Cheddar Horseradish...served on a grilled brioche bun (shaved Troyer roast beef grilled and served with melted cheddar horseradish cheese, with a thin layer of bistro sauce). These are great for anytime, but especially this time of year! Hard-working men and women are in the fields again and need a quick, handy, and FILLING meal. BOX LUNCH INCLUDES: sandwich of your choice, chips, fruit cup & a jumbo chocolate chip cookie. (may choose with or without water 4

Spring Chalk Art Cards We are now offering cards that feature our seasonal chalk-art! You can find them in-store now. These are perfect for a spontaneous note you want to send to a friend, a message of thanks, or anything. We already know they ll love it. New Items! Sweet Cream Pancake Mix These pancakes are just as good as they sound!- sweet, tender and delicious! The mix is pre-packaged and already measured for you just add water, stir, and sizzle the batter on the griddle! Each container makes approximately 10-12 pancakes. Need half that amount? Just measure half and add half the water. Pair these pancakes with one of our delicious syrups! Assorted Cookie and Bar Tray We ve designed a delicious assortment of a dozen cookies and a few Homestead bars into one convenient package! Find these in our customer freezer! Time to be planning for Graduation! Are you thinking ahead to graduation? It can be an overwhelming time for moms! Not only is it the sentimental strain of knowing your child has reached this milestone so soon (way too soon!)...but it's just a busy time of year as we wrap up the school year! As you think about planning your graduation party, remember that The Homestead can help plan and prepare food for your celebration! Keep in mind that your food will probably stretch further than you might think...especially if there are other parties on the same day. People don't (can't!) eat everywhere (although it would be delicious!). We are not open on Sundays, but perhaps you might think about picking up prepared food on Saturday- ready to serve, or ready to heat and serve, depending on what you order! 5

FARMERS MARKET May means farmers market season. We are excited to be joining the Saturday Lafayette Farmer s Market downtown from 8-12:30 each Saturday! Visit our tent for fresh-baked scones, rolls, bread, cakes, cookies, and more! Don t forget about the frozen take & bake casseroles! Something NEW this market season!
