Intrductin Fd preservatin is a methd f maintaining fds at a desired level f prperties r nature fr their maximum benefits. Preservatin usually invlves preventing the grwth f bacteria, yeasts, fungi, and ther micr-rganisms (althugh sme methds wrk by intrducing bacteria, r fungi t the fd), as well as retarding the xidatin f fats which cause rancidity. There are varius methds f preservatin chilling, freezing, curing, smking, dehydratin, canning, radiatin preservatin etc. Chilling is mst widely used methd fr preservatin fr shrt term strage f meat because chilling r refrigeratin slws dwn the micrbial grwth and enzymatic as well as chemical reactins. Freezing is the methd f chice fr the lng term preservatin f meat. It has advantage f retaining mst f the nutritive value f meat during strage.

Meat smking was knwn t man as an aid in preservatin fr a lng time. Smke cntains a large number f wd degradatin prducts such as aldehydes, ketnes, rganic acids, and phenls etc. which exert bacteristatic affect besides imparting characteristic smky flavur. Canning is a prcess f preservatin achieved by thermal sterilizatin f prduct held in hermetically sealed cntainers. Canning preserves the sensry attributes such as appearance, flavur and texture f the meat prducts t a large extent. Freeze drying f meat is a satisfactry prcess f dehydratin preservatin due t better recnstitutin prperties, nutritive quality and acceptability.

It invlves the remval f water frm the frzen state t vapur state by keeping it under vacuum and giving a lw heat treatment. Maintaining r creating nutritinal value, texture and flavur is an imprtant aspect f fd preservatin, althugh, histrically, sme methds drastically altered the character f the fd being preserved. Meat and pultry prducts are chilled immediately after slaughter t acceptable internal temperatures which insure the prmpt remval f the animal heat and preserve the whlesmeness f the prducts. As such, due t the recent up gradatin f preservatin techniques, the preservatin industry is als grwing almst at the same rate as the fd industry which is abut 10 t 12% per year.
