Cheeses HARD 4.75 Barber s 1833 English Vintage Cheddar (England). Aged for at least 24 months, this classic cheddar has refined sweet notes to balance the tangy sharpness. 4.75 Bellavitano Espresso (Wisconsin). Rich and creamy texture with a great, cravable taste reminiscent of an aged, premium Wisconsin Cheddar balanced by a full-flavored Parmesan. This Bellavitano is hand-rubbed with freshly roasted espresso, creating a truly unique flavor, somewhere between creamy and rich and crunchy and granular. 4.75 Gouda Lekker (Holland). In English, Lekker translates to delicious and this mature Gouda certainly is! Aged for six months, it has a delicate, full, creamy texture that pairs with darn near everything. 5.25 Mahon Curado D.O. (Spain). From the beautiful Balearic Islands in the Mediterranean, this cheese is often referred to as the Spanish cheddar. Incredibly versatile, with a salty crunch, it is simply delicious. 5.5 Manchego DO Valdehierro (Spain) (R). This raw sheep s milk cheese is aged for 12 months, which develops a soft, piquant flavor and a long, nutty aftertaste. Premium! 5.75 Widmer s 4 Year Reserve Cheddar (Wisconsin). This four-year aged cheddar is rich with notes of caramel. While it is aged for a considerable period of time, it is still moist and creamy on the tongue, with a noteworthy tanginess and slightly salty finish. SEMI 5 Asiago Pressato DOP (Italy) (R). This young cheese is made from the fresh, whole milk of the cows grazing in the low-lying Asiago plateau in the Veneto Mountains in northern Italy. Both fruity and grassy, this delicate cheese is named for the pressing during production. 5 Comté Gruyère AOC (France) (R). From the Jura Mountains in eastern France, this pale creamy yellow cheese is made only with unpasteurized summer cow s milk and aged for 14 months, giving it a slightly sweet taste. One of the world s greatest cheeses. 5.5 Drunken Goat DO (Spain). Fernando endorses this cheese! From Murcia in eastern Spain, this sweet, buttery cheese is cured for 48-72 hours in red wine, leaving the middle nearly pure white, while the rind absorbs a lovely violet hue. Pairs well with medium reds. 6.5 Fontelas San Simón da Costa DOP (Spain). Cow s milk cheese, smoked on Abedul wood. 5.25 Wenzel Smoked Gruyère (Texas). This smooth, rich gruyère is naturally smoked in Hamilton, Texas.
SOFT 5.75 Belletoile Brie (France). From the Lorraine region on the German border, the name means beautiful star. This soft-ripened cow s milk triple cream brie is rich, creamy, buttery, and perfect. 6 Cypress Grove Purple Haze (California). The unexpected marriage of lavender and wild fennel pollen distinguishes this chevre, and makes it utterly addictive. BLUE 4.75 Bleu d Auvergne AOC (France). From south central France, this cow s milk blue is slightly tart, salty, sweet, and crumbly. Try this mild blue on an apple slice with a drizzle of honey. 5.5 Moody Blue (Wisconsin). Rich, creamy Moody Blue is delicately smoked over fruit wood to create subtle smoky undertones with hints of roasted nuts and coffee. Beautifully balanced, sultry, and seductive. Meats 6 A Bar N Ranch Wagyu Beef Dry Smoke Sausage (Texas). Wagyu is intensely marbled with softer fat, it has higher percentages of monounsaturated fats, omega-3 and omega-6 fatty acids, and is lower in cholesterol than commodity beef. It is not only rich in taste and tenderness, but it is perfectly suitable for a well-balanced and healthy diet. True story-no guilt!! 5 Molinari Salami Toscana (California). This gourmet salame is made from heritage breed pigs, combined with the earthy delight of read truffles and the tart finish of Sangiovese wine.
