The Winning Dishes STARTER Creamy palm heart, pinapple confi t with black pepper and pomegranate. MAIN COURSE Organic Grilled seabass from Gulf of Corinth with calebasse (gourd), claws and mussel curry broth.

On the occasion of the 10 th anniversary of this illustrious event, the fi nest two Michelin-star chefs from France, United Kingdom, Germany and Italy teamed up with the Constance Hotels and Resorts chefs to create mesmerizing culinary masterpieces, sharing exciting and unforgettable memories in the kitchen of the Constance Belle Mare Plage. The creations of these candidates were based on the principles of the «Culinary Spirit» of Constance Hotels and Resorts; they put their skills to the test and went beyond the limits of their art for the sake of good taste and gastronomy. Moreover, the European chefs shared their knowledge and skills with the local chefs throughout the week, and they all bonded during unique moments, such as the visit to the typical Flacq market where they discovered and chose the local products they would ultimately use in their culinary creation. DEUTZ TROPHY CANAPE Organic Oso Gambas, lime bread crusted. In honour of our longtime partnership with Champagne Deutz, one of our main partners since the very first edition a special trophy has been added to the main competition. The European Chefs have prepared a canapé and created a perfect pairing with Amour de Deutz Rosé Champagne 2006. The 2 Michelin Starred Chef William Frachot from L Hostellerie du Chapeau Rouge in France is the great winner.
COCKTAILS COMPETITION Four exceptional barmen from Constance Le Prince Maurice and Constance Belle Mare Plage, hand-picked for the 10 th anniversary of the event, showcased their mastery of the art of mixology during the Cocktails Competition held on Saturday March 21 st. The cocktails prepared by the participants were ultimately judged by our starred Chefs and the winner, Jonathan Nazira from Constance Belle Mare Plage was crowned in an atmosphere of passion, sharing and savoir-faire. THE ART OF THE TABLE COMPETITION This year again, Constance Belle Mare Plage s Blue Penny Café hosted the Service and Art of the Table competition on Thursday March 26, an event rich in tradition and emotion. 4 waiters and chefs de rang from Constance Belle Mare Plage and Constance Le Prince Maurice set up their table and performed their best service for the prestigious jury (Dominique Loiseau, Mercotte and Marie-Aude Vieira). After deliberation, they chose Annecy Yan Kan Yun from Constance Belle Mare Plage as the winner of this competition.
THE CAFÉ GOURMAND COMPETITION This contest, held at Blue Penny Café on the March 26 2015, is an ode to gourmandise during which the Constance pastry chefs and executive chefs proposed an original, creative and innovative coffee recipe served with delicious sweets to the jury (Dominique Loiseau, Mercotte and Pierre Hermé). Moreover, these creations had to match perfectly the Nespresso Grands Crus provided for the occasion. The prize was attributed ex-aequo to Nicolas Durousseau from Constance Belle Mare Plage and Valentin Brondani from Constance Le Prince Maurice. THE SOMMELIER COMPETITION Three carefully hand-picked sommeliers of Constance Le Prince Maurice and Constance Belle Mare Plage showcased their skills and knowledge of wine waiting traditions during the Sommelier Competition on Friday March 27 2015. The three Mauritian sommeliers presented their selection of wines in front of three jury members (Fabrice Rosset, Laurence Helfrich and Andreas Larsson) and De Lores Malin from Constance Belle Mare Plage was crowned for this competition.
