The Singapore Heritage Afternoon Tea serves to encapsulate this era, with eight sweet and eight savoury dishes that pay tribute to our multi-cultural influences. Discover familiar flavours in the Chilli Bak Kwa Jam on Savoury Egg Tart, where the sweet-salty conserve is crafted from charcoal-grilled pork marinated in chilli. The long-lost skill of Roti Jala is revived with a soft lacy pancake that envelopes piquant Nonya-style Chicken Curry.

Sweets are similarly rooted in local nuances. Bandung a refreshing favourite of rose syrup and evaporated milk is reinterpreted into pretty pink Macarons, while buttery scones are dolloped with Homemade Kaya or a deliciously tart Passion Fruit and Mango Jam. $45 per person.
