Cold starters DALMATIAN PROSCIUTTO (100g, 12-36 months) 680 Dalmatian prosciutto is a culinary specialty created by smoke drying pork ham of a cross bread Yorkshire and Landrace, weighing 120-180kg because this pig gives the best ratio of fat and muscle tissue. The process of smoking the ham lasts for about 30-45 days, after which the prosciutto remains exposed to natural airflow that of the strong sea wind which assists continuous drying process. With the arrival of warm days the prosciutto is moved to the basement to ripen. Ripening takes place in dark rooms at a temperature of 12-18 C with relative humidity between 60-75%. The prosciutto is ripe within the 12 months from the moment it had been salted. PAG ISLAND CHEESE (100g) 820 Pag island cheese has a delicate spicy taste and aroma, it crumbles and melts in your mouth, and aromatic vegetation of island Pag is present in its aroma. The cheese is left on natural wooden boards to ripe for at least 3 months which is the process of cheese ripening traditionally maintained only in Pag island. The main characteristic is that the cheese is made from unpasteurized milk. For 1kg of cheese 6-7l of milk is used. CHEESE PLATE 850 Pag Island cheese, Pecorino Romano, goat cheese in oak bark, Camembert, Cambozola, served on a board with dry fruit. OCTOPUS CARPACCIO 920 Thinly sliced octopus served on arugula, seasoned and topped with lemon juice and olive oil. WILD FISH CARPACCIO 750 Thinly sliced fresh wild fish, spiced, seasoned and topped with orange juice, lemon and olive oil. TUNA TATAR 1.050 Minced fresh tuna with fresh herbs and extra virgin olive oil. CODFISH BIANCO 1.070 Dried codfish spread, potatoes, garlic and white wine with the addition of spices.
