MISTELLE A culturally significant French beverage dating back to the 16th century. Mistelles are a blend of fresh or slightly fermented grape juice and raw Eau de vie aged in barrels from 9 months through to 3 years in order to meet strict control guidelines. Each region of France has its own interpretation of Mistelle using their local grape variety and Eau de vie, the only exception is from the Calvados region where apple brandy is made which is a blend of apple juice an young Calvados aged in barrels. Mistelles are usually enjoyed as an aperitif with range of flavour profiles varying from delicate floral notes, light fruits, redberries and dark raisins. Served on the rocks or with a dash of soda mistelles make for a refreshing yet intriguing beverage. At Soultrap we have curated a shortlist of cocktails showcasing mistelles from different regions of France. FLOC DE GASCOGNE A lusciously floral aperitif from Cotes de Gascogne and the Armagnac region in southwest France. A combination of two-thirds fermented grape juice and one-third young Armangnac which is then left to age for at least nine months in French oak. POMMEAU DE NORMADIE The Calvados regions take on a mistelle, holding divine notes of fresh apples. A blend of young Calvados and fresh pressed apple cider, aged in oak for a minimum of five years. PINEAU DES CHARENTE Hailing from the Charentais region region of southwest France, providing flavours of bush honey and ripe black currant. A melange of Cognac and fresh grape must is left to age in French oak for over eighteen months. RATAFIA From the home of Bourgone, Ratafia bequeaths strong tones of toasted raisins making for a subtly delicious drink. A blend of red grapes and fine de bourgone, an Eau de vie made from grape stems and pips. MACVIN-JURA Using the unfermented juice of chardonnay and Poulsard grapes to which Marc du jura is added to create undertones of orange zest, quince and prunes. Macvin jura is aged no less that three years.

SOULTRAP HIGHBALL DEWARS 12, APPLE SHRUB, FLOC DE GASCOGNE, LEMON JUICE, GINGER BEER A refreshing take on Japanese highball, with a slightly oaked and effervescent feel of preserved apple. ERNEST QUINN BACARDI CARTA BLANCA, RINQUINQUIN, MARASCHINO, LIME JUICE, GRAPEFRUIT JUICE, PEACH BITTERS A pleasant approach to a Daiquiri, soft undertones of peach and cherry. THAT VODKA DRINK 42 BELOW VODKA, VIOLETTE LIQUOR, FALERNUM, LIME JUICE A funky floral flux of 42 below, violette liquor and falernum held together by freshly squeezed lime juice.
