Gordon would like to mention how beautiful the park looked with all its Christmas Decorations this season. It was so wonderful to see how many residents took part and the fantastic displays they presented to us all. Everyone in the park is enjoying the various displays. Thank you to everyone for making our park a great place to live. Our exchange Library, located in the Activity Center, is a very inviting place to be. Phyllis has it well organized and beautifully decorated. There have been new donations so come check it out. There are magazines, books, etc. Just leave your returns and trades on the table. Tuesday Card Bingo is a lot of fun. Come and join us at 6:30 in the Activity Center TAG-A- LONG BINGO/CASINO TRIP On the second Monday of each month a few of us go to Bingo at Vee Quiva Casino. We leave at 9:30 AM. Bingo is from 12-3PM. You may play Bingo or just play slots. We leave at 4:00 to return home. Bring your own car or hop in with someone else. Everyone is welcome to come along. We will meet in the parking lot by the Activity center at 9:25 and drive as a convoy. Recipes of the Month DI S LEMON GLAZED CHEESECAKE Crust 2 cups graham wafer crumbs ¼ cup sugar 1/3 cup butter, melted Filling 1 lb. Cream cheese, softened (2 large packages) ½ cup sugar 2 eggs 1/6 cup lemon juice 1 ½ tsp vanilla 2 tbsp lemon peel, grated Topping 2 cups sour cream 3 tbsp. Sugar 1 tsp vanilla Lemon Glaze ½ cup sugar 2 tbsp corn starch ¼ tsp salt ¾ cup water 1/3 cup lemon juice 2 tbsp. Lemon rind, grated 1 egg yolk, beaten 1 tbsp butter Crust.Mix together all ingredients and press into a 9 springform pan and bake at 350 for 5 minutes. Cool. Filling Beat cream cheese and sugar together until well blended. Beat in eggs, one at a time, until mixture is light and fluffy. Add rest of ingredients and beat until smooth. Pour into prepared crust and bake at 350 for 35 minutes or until firm to touch. Topping While cake is baking, mix together topping ingredients. When cake is done remove from oven and SPOON on topping AROUND THE OUTSIDE EDGES. Then spread it evenly. DO NOT JUST DROP IT ALL THE CENTRE BECAUSE IT WILL FLATTEN THE CHEESECAKE IN THE MIDDLE. Bake an additional 5 to 10 minutes. Remove from oven and cool for 1 hour and top with lemon glaze. Lemon Glaze Mix sugar, cornstarch, and salt together in a small sauce pan. Add rest of ingredients except butter and stir over medium heat until mixture is thickened. Add butter. Cool slightly. Pour over cake and refrigerate cake for 6 hours or overnight. Cindy s Lacy Oatmeal Cookies 1 pound butter, soften 1 tsp. baking soda 2 C. sugar ¼ tsp. salt 1 egg 3-4 C Oatmeal 2 C. flour 1 tsp. vanilla Cream butter and sugar until smooth. Add egg and vanilla Add dry ingredients. Add 3 C. oatmeal (If still too wet add another cup) Mix well. Drop by tsp. onto ungreased cookie sheet. Flatten with fork dipped in water. Bake@350 12 min. When cool you can dust with powdered sugar. 6
