We honour the pouring tradition I The Purification, your bartender will always use a clean glass, which is rinsed and then chilled with cold water, allowing the glass to reach the same temperature as the beer. II The Sacrifice, ensuring every drop of beer is fresh, your bartender allows the first foams from the tap to wash away. III The Liquid Alchemy Begins, the chalice is held at 45 degree angle allowing the perfect amount of foam to start forming the head of the beer. IV The Head, the glass is straightened and the head forms creating the vital protection for the beer ensuring maximum freshness and flavour. V The Removal, your bartender then closes the tap in one swift motion and moves the glass away to prevent drips entering the beer that have had contact with the air, these drops have oxidized and are not worthy of your beer. VI The Beheading, while the head is still forming, your bartender cuts it gently with a knife to eliminate the larger bubbles, bursting easily they accelerate the dissipation of the head. VII The Cleansing, your bartender rinses the bottom and sides of your glass, this keeps the outside of the chalice clean and comfortable to hold. Authentic Trappist Beer Trappist is a high fermentation beer brewed by monks inside monasteries; only 11 Trappist-monasteries are producing beer in the world. A Trappist has to satisfy a number of strict criteria, including beer must be brewed within the walls of the monastery by monks or under direct supervision, and the brewery is not intended to be a profitmaking venture. The art of Trappist dates back to the middle ages when the beer was brewed for its nourishing properties. There are 6 Trappist breweries in Belgium and we have 5 on offer. Brown sugar, strawberry, & orange preserves on the nose before soft caramel, a hint of chocolate, then pepper, spice & orange liqueur to end. Lots of body Rochefort 10 Rochefort, Belgium 11.3% 330ml $16.6 Brasserie Rochefort The top product from the Rochefort Trappist brewery. Dark colour, full and very impressive taste. Strong plum, raisin, and black currant palate, with ascending notes of vinousness and other complexities. Wit & Saison Witbier (white beer in Flemish) are yet another example of a style that nearly expired, but is now quite popular following an enthusiastic rebirth. There are two requirements of this style: first, it must contain up to 50 percent wheat and secondly, the use of spices namely coriander. Saison (French for season), also known as farmhouse ales, are traditionally brewed in the winter, to be consumed throughout the summer months. Look for earthy yeast tones, mild to moderate tartness and lots of spice Titje Blanche Brasserie de Silly Silly, Belgium 5.0% 330ml $13.5 Classic Belgian Witbier using their special blend of spices including coriander and curacao dried orange peel along with Hallertau hops. This is a refreshing beer, producing a big white head in the glass, creamy mouthfeel and a lightly bitter finish. Saison Dupont Brasserie Dupont Tourpes-Leuze, Belgium 6.5% 330ml $14.5 A classic Belgian farmhouse ale. This is a beautifully balanced, complex beer that has a refreshing fruitiness and long, dry finish. It is bottled unfiltered so it may be cloudy or have a slight sediment but this is normal and perfectly natural.
Blonde & Tripel The name "Tripel" actually stems from part of the brewing process, in which brewers use up to three times the amount of malt than a standard Trappist "Simple." Traditionally, Tripels are bright yellow to gold in colour, which is a shade or two darker than the average Pilsener. Tripels are actually notoriously alcoholic, yet the best crafted ones hide this character quite evil-like and deceivingly, making them sipping beers. Top fermented, it is then matured at length in cellar and bottle, and is 100% pure with a unique colour and a full flavour due to its well-balanced hopping. Straffe Hendrik Brugs Tripelbier 9 Brugge, Belgium 9.0% 330ml $15.8 Huisbrouwerij De Halve Maan A golden triple with a sturdy white collar. The aroma is spicy with hints of black pepper, coriander and ginger, and is even insinuating the presence of oranges. The palate initiates a hint of caramel, soon flowing into a certain bitterness. In the finish one can discover citrus fruits and even subtle flavours of banana. Duvel Duvel Moortgat Breendonk, Belgium 8.5% 330ml $13.2 A top fermentation beer, re-fermented in the bottle. Blonde in colour with a nice, creamy head. Smooth on the palate, hoppy and full of taste. Excellent sweet/ bitter balance. Pleasant aroma and long-lasting aftertaste. Delirium Tremens Melle, Belgium 8.5% 330ml $15.7 This beer is lightly hopped & surprisingly malty. It uses three different yeasts & packaged in a bottle painted to resemble cologne ceramics & the label depicts the beers production. Delirium Tremens is Latin for trembling madness

The creaminess of the oats and the orange-like aroma makes it a staff favourite Hoegaarden Grand Cru Hoegaarden, Belgium 8.5% 330ml $14.2 Brouwerij van Hoegaarden Pouring cloudy orange almost golden in colour, the Cru has a fruity, thick aroma and an abundant foamy head flavoured with curacao orange & coriander St Bernardus Tripel Watou, Belgium 8.0% 330ml $15.3 Brouwerij St. Bernardus This beer, with high fermentation, has a pale amber colour and a flowery, fruity taste with a harmonious balance between sweet and sour. This beer has a thick and vivid froth and strikes by its balanced taste with a delicate bitterness. Lambic & Fruit Beer Most commercial beers are made with carefully selected strains of yeast, but brewers of lambic beers leave things up to chance. The beer is left in open vats where wild yeast and bacteria are allowed to take up residence. Once the fermentation process begins, the beer is stored in barrels and left to age for up to three years. If we had to describe lambic beers in one word, we'd probably go with "funky." Bacchus Framboise Ingelmunster, Belgium 5.0% 330ml $13.9 Brouwerij Van Honsebrouck A beautifully well balanced beer, with a perfect marriage of sweet and sour. It is zesty, refreshing and thirst quenching. The moment you pour, you will smell the raspberries. Brune & Amber A general category for mostly Belgian Strong Dark Ale s and the darker Strong Pale Ale s, and for those who seek a bit of mystery and intrigue, look no further. The mystery in this dark beer comes with the complexity of the beer, which is largely determined by the brewer s intent. Intrigue comes from the sometimes deceivingly high alcohol that can hide from the senses behind the dark ale s aromas and flavours. The Ambrio has been brewed since the fourteenth century, and is the last of its style brewed in Belgium. Tastes similar to its aroma, with dark fruits, caramel, spices & a little hop bitterness Kwak Brouwerij Bosteels Buggenhout, Belgium 8.4% 330ml $14.9 This fine brew was created in 1791 by Mr Pauwel Kwak. The recipe has not changed since & this double-fermented beer continues to entice. With hints of vanilla, lime & a sweet caramel finish balancing the overall dryness. The palate hints at sour cherries and brown sugar and has a slightly bitter aftertaste.
