An acronym for Culinary Arts & Research Academy, at CAARA we promote food experiences that borrow from the seasons while working with fresh, local produce. From our catering services to our cafes and cooking schools, we believe in the ethos of conscious food and are mindful of where we source our ingredients from. We use chemical-free produce grown at our own farms or support local, artisanal suppliers, and only when we cannot source high-quality ingredients locally do we then look for the very best globally. Our menu for NicoCaara hinges on this same philosophy. Using Nicobar s tropicalinspired brand as a springboard, we ve begun an exploration into produce from the lands that meet the Indian Ocean. At NicoCaara, you ll find a small plates menu that s designed to mix and match and to share and enjoy together. We work with local Indian and Asian produce which means that we naturally shy away from ingredients like refined flour and sugar and work more with local grains as well as sweeteners like coconut sugar, jaggery and honey. You won t find blueberries from Chile but you will find cape gooseberries grown on our farm in Delhi, and our menu will change to celebrate the produce of the season. Plus, the menu is clearly marked to help navigate any intolerances, and those who are gluten, dairy, or sugar-free will find plenty to enjoy. We levy a 5% service charge, government taxes as applicable.
