fl avouring, colouring and sweetening apple extract Consumer consciousness of natural food ingredients is still increasing. Artifi cial colours / E-Numbers on the ingredient list trigger rejection from customers. is not just a natural alternative to colour food but the components of the apple extract provide additional value to your product. is the product of your choice if you want to set an accent in colour and taste without having to use isolated colourings or fl avourings. The intense brown colour is mainly based on the high content of polyphenols. These nutritionally valuable secondary plant compounds are attributed to be antioxidants and free radical binders. The Herbafood Ingredients GmbH is able to guarantee a steady aroma profi le and colour intensity of through the production process. The natural apple extract can be used to provide a colour spectrum from light gold to deep brown. Besides the colouring effect, the fruity components and the acidic note of the round off the gustatory profi le. The balanced sugar profi le of apple, including fructose, glucose and sorbitol has a positive effect on moisture-regulation and fresh keeping in food. The sugar content of the types AF 03, AF 06 and AF 12 is about 40 %. A sugar reduced and dark brownish type of, named AF 24-SR, with about 2 % remaining sugars is also available. This type is perfectly in use for colouring without adding sweetness and comes in powder form as AF 24-SR-M20 as well. The product range facilitates a wide fi eld of applications and contributes to fulfi ll customer expectations.
