We also provide certain standing items daily for meal options (ex. chef salad, soups, sandwiches, burgers, hot dogs, etc.) if a resident does not like the main or alternative option. Resident choice and preferences are taken upon admission or ahead of time and we try to factor those choices when preparing the meal. After that, there is not much resident choice on a day to day basis with meals. We also keep a supply of microwavable meals in the serving areas to accommodate residents who choose not to eat the main course.. We have a 6 week menu cycle that we change out seasonally for Spring, Summer, Fall, and Winter. At the bottom of each menu we have alternate choices the residents can choose from if they desire to select. Not all residents are on a selective menu, but many are. We do not have a deep fat fryer. The cycle changes twice during the year (Summer menus and Winter menus). The attached cycle is Summer. We also have 2-3 Entrée alternative that are always available. Alternative may include another hot entrée, Soup and sandwich or a salad. We would love to move toward a more home like friendly meal plan versus tray line and diet carts with trays. We have found that difficult with our Main kitchen space so large and not enough room in our common areas to do a smaller scale kitchen or dining area. We can have up to 199 residents in our building. We are always looking for ideas as well. As you will see, breakfast is resident choice, they choose from a breakfast menu, but the homemaker will often do a daily breakfast special which most residents choose, but the other choices are always available. We do not have a deep fryer anywhere in our facility.
For lunch and supper, residents may choose from either our cycle menu option, or else from an array of substitutes on the household (see the always available section of the attached menu). We also keep leftovers from the previous two days which can be selected as an alternate. Our staff will try to be accommodating as possible. We are very fortunate to have one person on each household, the Homemaker, who prepares food items for that household (13-14 residents). We offer almost whatever the resident wants for breakfast, but if they do not have specific requests, we give them what is on the weekly breakfast menu guide. At noon and supper we offer an alternative menu, and then if they do not want those items, the resident can choose from the Always Available Menu. Always Available Menu items need to be called into dietary at least 1 ½ hrs prior to meal service. We do also have at least 1/8 of our residents who receive a copy of the weekly menu guide once a week; make selections for the upcoming week, and return it to Dietary.
