Make Your Own Hesper Farm Skyr Yoghurt Cheesecake Serves 6 Ingredients The Filling: 200g Full Fat Cream Cheese 1/2 Pint Double Cream 125g Skyr Yoghurt 1 Dessert Spoon of Icing Sugar (To Taste) 500g Strawberries 3 Tablespoons of Caster Sugar Chocolate Soil: 140g Plain Flour 85g Butter 30g Cocoa Powder 85g Sugar Method Quarter the strawberries and sprinkle 1. with caster sugar. Place on a baking parchment lined oven tray and roast on medium heat - 160 C until syrupy and slightly sticky (about 30-40 minutes, just check they don t burn). Next, mix the cream cheese, skyr 2. yoghurt and icing sugar at low speed in a mixer and then add cream - mix until it is the consistency of lightly whipped cream. Fold in the roasted strawberries and hand mix until rippled through. Now make the chocolate soil - mix 3. the flour and cocoa powder together and rub in the butter and sugar to make a crumble texture. Place it on a baking parchment lined oven tray and roast on medium heat - 180 C until crisp. Then crush over the filling and refrigerate. Before serving scatter fresh strawberries on top to finish!

What is your favourite dish? I love my mum s Sunday lunch, you can t beat a homemade roast....and your least favourite dish? Oysters, I just don t like the texture of them! Who is your chef inspiration? Simon Rogan, owner of L Eclume in Cartmel. I like his style and he uses seasonal produce from his own farm so his menu is always changing and full of variety. What is your must have kitchen tool / gadget? A thermomix, it can chop, mix and cook, every kitchen needs one. Where do you get your inspiration from? Nature and natural beauty.
