Diamond Package The Diamond Package is the most popular package for our couples. A formal sit down three course meal, it s the perfect choice for a simple day. Starter Smoked duck salad with mango purée. Chicken liver parfait with ciabatta bread and red onion chutney. Salmon Gravadlax with a creamy sauce and cucumber salad. Leek, ricotta and gruyére tart served with a salad garnish. Smoked salmon, prawn and lemon tart served with salad garnish. Soup of the day with Gruyère croutons. Thai fishcakes with a sweet chilli mayonnaise and side salad. Main Prosciutto wrapped chicken breast stuffed with feta and wild mushrooms. Peppered sirloin of beef served with Dauphinoise potatoes and a red wine and Port jus. Lemon and thyme butter basted chicken breast with asparagus. Slow roasted pork belly on a bed of mash with a creamy West Country cider sauce. Rump of lamb with a herby mustard crust, crushed Niçoise potatoes and a shallot gravy.
