Iformatio What are allergies? Allergies occur whe the immue system produces atibodies agaist substaces i the eviromet (allerges) that are usually harmless. A food allergy is a immue system respose to a food protei that the body mistakely believes is harmful. Whe the idividual eats food cotaiig that protei, the immue system releases massive amouts of chemicals, triggerig symptoms that ca affect a perso s breathig, gastroitestial tract, ski ad/or heart. It is estimated that up to 2% of Australia adults ad 1 i 10 ifats* aged 12 moths, have food allergy ad some of them will experiece a life-threateig allergic reactio (aaphylaxis). Activity 2.1 READING INGREDIENT LISTS Readig the Igrediet list o packaged foods is a skill that helps us make healthy food choices but it takes some practise. It is particularly importat that people with food allergies read the igrediet lists of packaged food because this will help them avoid the foods they are allergic to. Tips for everyoe: First thigs first: I ay list, the biggest igrediets must be listed at the top. Beware of foods that start out with sugars (like sugar, cor syrup, ad sucrose), fats ad oils (vegetable oil, soybea oil), ad salt.
