3 RECIPES Chocolate Peanut Butter Banana Stuffed French Toast INGREDIENTS: 4 slices Texas toast (I prefer Texas toast over regular bread because it s thicker) about 8 tablespoons chocolate peanut butter, divided (Nutella may be substituted) 1 medium banana, sliced into thin rounds 2 large eggs 1/4 cup milk (I used unsweetened cashew milk) 1 tablespoon granulated sugar 1/2 teaspoon cinnamon about 2 tablespoons unsalted butter, for griddling DIRECTIONS: Spread each slice of bread with about 2 tablespoons chocolate peanut butter. Evenly add bananas to two of the slices in an even, flat layer. Top with remaining bread slices (with the chocolate peanut butter side down, touching the bananas); set the 2 sandwiches aside. To a medium bowl, add the eggs, milk, sugar, cinnamon, and whisk to combine; set aside. To a large skillet, add the butter and heat over medium-high heat to melt. After butter has melted, dip each sandwich in the egg mixture, on both sides, and place sandwiches in skillet. Cook for about 3 to 4 minutes per side, or until lightly golden browned on both sides. Slice and serve immediately. French toast is best warm and fresh. Chicken Pot Pie Soup Instructions Preheat oven to 350 F. Season chicken with seasoned salt and pepper. Heat oil in a large skillet over medium-high heat. Add chicken and saute until cooked through. Remove from heat and cut into chunks. Alternatively, you may use precooked chicken. Once cooked, remove chicken from pan and set aside. Meanwhile, Cut each sheet of thawed puff pastry into 1-inch strips and place on a large cookie sheet. Brush egg onto the pastry strips (for browning). Bake for 10 minutes, or until dough has risen and turned light golden brown. Remove from the oven and set aside until ready to serve. Dissolve the chicken base into 1 cup of water. Stir until fully dissolved. Then into the same large skillet, melt butter and saute the onions until they soften; about three minutes. Then slowly add flour, stirring until consistency of peanut butter, but do not brown like a roux -- you want it to remain a golden color. Slowly add cream and keep stirring. Add chicken base ( to taste), and garlic, and stir until thickened. Add peas, carrots, nutmeg (optional), and cut up chicken. Remove from heat. Thin to your desired consistency Serve with puff pastry sticks. Ingredients For the Pastry Sticks 2 sheets frozen puff pastry, thawed per package instructions 1 egg, beaten For the Soup 4 chicken breast halves, or 2 cups leftover cooked chicken ground pepper and salt - to taste 2 tablespoons cooking oil 1/3 cup butter 1/4 cup all-purpose flour 1 quart (4 cups) heavy cream 4 teaspoons chicken base - or per the pkg instructions See Notes** 1 cup water (for dissolving the chicken base) 1 tablespoon minced garlic ½ small yellow onion, minced 1 cup frozen green peas, cooked 1 cup chopped cooked carrots Pinch (about 1/4 tsp) fresh grated nutmeg, optional SPANA-PARK SENIOR CENTER PAGE 3

9 ACTIVITY PAGE Directions: Cut the Q- ps in half DIY Flower Decoration Poke them into the Styrofoam ball: If you make them too close together, the q- ps won t push down very far. Once you are finished, mix up some water and food coloring. Here s what you will need: Q-Tips Food Coloring Styrofoam Balls Keep rolling the ball around in the food coloring un l all the q- ps are evenly colored. Fake Flowers Set it on a towel to dry. The color will lighten a li le when dry, so keep that in mind when you are mixing up your color! Now, snip the stems off of some cheapy flowers. Keep the wire inside the stem. Poke it into the ball. You may want to secure it with a bit of hot glue. And there you have it! My memory is gone Mildred, so I changed my password to Incorrect. The plan is for it to be on Wednesday mornings from 10:00 am until 11:00 am. It will be a low impact stretching type of class. We will also offer a box type of lunch that will be ordered in advance for those card players that want to do both, but may not have enough time to run out and eat. THERE WILL BE THE OCCASIONAL TUESDAYS THAT WILL BE SPECIAL LUNCHES SO BE SURE TO CHECK EACH MONTHS CALENDARS FOR THOSE DATES. Our raffle has NOW BEGUN for our Beautiful KING SIZE QUILT made by our Quilting group. If you would like to purchase tickets, they are at the office & are $1.00 a piece! The drawing will be held on November 15th 2018 at our annual Thanksgiving Dinner. If you are interested in selling tickets, please see Beth in the office. Mark your calendar for Tuesday, February 13th for our next AARP class. Space is limited so please be sure to get your name on the list ASAP. The class will be held at the center from 9:00am to 3:00pm. This will also be the day of our Valentine s Day special lunch. We are always looking for volunteers! WE ARE CURRENTLY LOOKING FOR A JANITOR/ MAINTENANCE PERSON. THE POSITION IS FOR TUESDAYS & THURSDAYS FROM 10:00AM TO 2:00PM & THE THIRD SAT- URDAY OF EVERY MONTH FROM 7:00AM TO 11:30AM. THE PERSON HIRED WILL NEED TO BE ABLE TO WORK ON THEIR FEET QUITE OFTEN AND BE ABLE TO DO SOME LIGHT LIFTING. WILL NEED TO ALSO BE ABLE TO TAKE DIRECTION WELL AND STAY ON TASK. INTERESTED APPLICANTS WILL NEED TO VISIT THE CENTER DURING NORMAL BUSI- NESS HOURS AND FILL OUT AN APPLICATION AND BACKGROUND CHECK. We would like to remind everyone that our Lunch menus are subject to change. With that being said, if the menu calls for a dish that you are excited for, but we are closed due to weather, it will probably be something different because of not being to get to the center in time to get groceries or items out of the freezer.
