It was a delicious meal with all the fixins and the basket raffle was another great success. Brenda would like to thank everyone that helped in any way. It takes a lot of work and time from set up to cleanup and it could not have been done without everyone's help. Thanks to all who made soup and donated bread and deserts for the February Soup Supper. There will not be a soup supper in March because of the Elections but please make sure you get across to the clubhouse and vote. Val Stauder A St Patrick s day joke An Irish man has been at a pub all night drinking. The bartender finally says that the bar is closed. So your man stands up to leave and falls flat on his face. He figures he ll crawl outside and get some fresh air and maybe that will sober him up. Once outside he stands up but again falls flat on his face. He crawls home. Reaching the door he tries to stand up, and yet again, falls flat on his face. He crawls through the door and up the stairs. When he reaches his bed he summons the last of his strength and tries one final time to stand. It s no use. He tumbles into bed and is soon sound asleep, only to awaken the next morning to the sound of his wife standing over him shouting. So you ve been out drinking again! How did you know? he asks, his head hung in shame. The pub called you left your damn wheelchair down there again! 2
3 As always the Chinese Auction Basket Raffle was a great success. There was a delicious spaghetti dinner that started the night off. Thank you Brenda Cloukey for chairing the dinner. 4 MARCH EVENTS March 2nd Yard Sale see details below March 4th - Social Club Meeting March 6th at 6pm Block Party Meeting regarding the planning of the Block Party on 23rd March. Everyone that is willing to help, please attend March 11th - Elections - Come out and vote from 3-6pm at the clubhouse. Please bring your ID so the census can be completed. Also make sure you supply your current information to Lorrie Capasso for a new park directory when you come to vote. March 16th - St. Patricks Corned Beef and Cabbage Dinner - $15/PP. Doors open at 5pm and dinner at 530. Entertainment to begin at 7:00pm. Ham will also be served for those who do not like corned beef. Please let your ticket gal know your choice at the time you purchase your ticket. Ticket Cutoff is March 12th. No tickets will be sold after this date so be sure to contact someone if you have not purchased tickets before this date. March 23rd. Block Party The location is the same as last year which is in front of the RV Lot. It will begin at Noon with games with prizes and socializing. Hot dogs will be provided by the Social Club. Food will be served at 2:00pm. There will be a sign up sheet in the clubhouse to list how many are attending and what you are bringing. Please be sure to sign up so we know how many to set up for and how many dogs to purchase. March 30th - Breakfast - 8:30-9:30. French Toast, Eggs to order, sausage and fruit cup and juice. Cost is $5/PP. Ticket cut off is March 27th. Annual Yard and Bake Sale The annual garage sale for Great Cypress Community will be held on March 2nd. You can have a table in the Clubhouse for $5 (first come first serve) or have one in your own driveway for $5. The fee helps pay for the ads that are put in our local papers. If you would like to donate items to be sold and the $$$$ given to our Social Club please drop them off at the Clubhouse the week of February 24th. Please be sure your donated items are clean, not broken and in working condition. There will also be a bake sale that we will need items for that need to be brought to the clubhouse on Friday, March 1st so they can be priced and packaged to sell. Hotdog lunch and popcorn can be purchased during the community sale. This $$$ will also be donated to our Social Club. 4

6 Amazingly Easy Irish Soda Bread INGREDIENTS 4 cups all-purpose flour 4 tablespoons white sugar 1 teaspoon baking soda 1 tablespoon baking powder 1/2 teaspoon salt 1/2 cup margarine, softened 1 cup buttermilk 1 egg 1/4 cup butter, melted March Edition 2019 Preheat oven to 375 degrees F (190 degrees C). Lightly grease a large baking sheet. In a large bowl, mix together flour, sugar, baking soda, baking powder, salt and margarine. Stir in 1 cup of buttermilk and egg. Turn dough out onto a lightly floured surface and knead slightly. Form dough into a round and place on prepared baking sheet. In a small bowl, combine melted butter with 1/4 cup buttermilk; brush loaf with this mixture. Use a sharp knife to cut an 'X' into the top of the loaf. Bake in preheated oven until a toothpick inserted into the center of the loaf comes out clean, 45 to 50 minutes. Check for doneness after 30 minutes. You may continue to brush the loaf with the butter mixture while it bakes. INGREDIENTS ST. PATRICK S IRISH STEW Peel and cut up carrots and potatoes, mince garlic. Trim root end off leeks, strip off tough greens. Cut leeks lengthwise and rinse any grit off under water. Slice into 1/2" pieces. Cut the lamb into 2" chunks. Pat dry and sprinkle with kosher salt and pepper. Heat 2 tablespoons of oil in a Dutch oven or heavy based pot over high heat. Add lamb in batches and brown well all over. Remove to plate and repeat with remaining lamb. Set aside. Lower heat to medium and add remaining tablespoon of olive oil. Add onion and leek, cook for 3 minutes until softened, then add garlic, cook 2 minutes. Stir flour into the vegetable mixture and cook for 3 more minutes. Add Guinness beer, stirring and scraping up browned bits on bottom of pan then add beef broth. Return browned lamb to the pot, including any juices, along with carrots, potatoes and thyme tied with kitchen twine. If lamb and vegetables are not fully covered add enough water to do so. Cover, bring to a boil, stir then lower heat so it is bubbling gently. Cook 2 hours then remove lid and simmer for a further 30 minutes until lamb falls apart and the sauce has reduced and thickened.season with salt and pepper to taste. Remove thyme bundle and serve with crusty bread. 3 tbsp olive oil 2 lbs lamb shoulder or beef chuck cut into 2 inch chunks 1 tsp kosher salt 1/2 tsp black pepper 1 onion chopped 3 leeks 3 garlic cloves minced 3 tlsp flour 22oz Guinness beer 2 cups beef broth 4 carrots peeled and cut 1/2 pieces 2 potatoes peeled and cut 2 pieces 3 sprigs thyme or sub 1 tsp dried thyme leaves If you don't want the Guinness beer (alcohol), then substitute the Guinness with 2 1/2 cups water mixed with 2 beef bouillon cubes and a tablespoon Worcestershire sauce Easy No Bake Chocolate Oat Bars Directions.Line a 8-inch-by-8-inch baking dish with parchment paper, and set aside. In a medium saucepan, combine the butter, brown sugar and vanilla extract. Heat over low-heat, until the butter has melted and the sugar has dissolved. Add the oats, cinnamon and kosher salt. Cook, stirring constantly, for 4 to 5 minutes. Pour half of the oat mixture into the prepared baking dish. Spread out the mixture evenly, pressing down. In a small microwave-safe bowl, combine the chocolate chips and the peanut butter. Heat on high in the microwave, in increments of 40 seconds, stirring in between each increment, until melted and fully combined. Pour ⅘ of the chocolate mixture into the pan over the pressed oats, reserving about ¼ cup for drizzling. Top with the remaining oats and drizzle with the remaining ¼ cup chocolate mixture. Refrigerate for 4 hours, or until set. 6
