7 PRODUCE Make half plate fruits & vegetables Quick Tips Pineapple SELECTION: Look for oblong wide shapes with spikey textured, yellow to brown thick skins, topped with greenish blue spiky leaves that form the crown. When selecting a fresh pineapple, look for the predominance of a golden color, especially towards the top. Check for a sweet smell. STORAGE: Remove the blue spikey leaves by lopping off the top portion of the pineapple, then lop off the bottom portion. Place the pineapple in an upright position and slice off the thick, prickly skin leaving only the yellow fruit. Once you ve removed the crown, stem, and spikey skin, slice the pineapple into chunks or circular slices. Store freshly sliced pineapple inside an airtight container with moistened paper towels to maintain freshness for up to three days. To prevent pineapple from turning brown due to oxidization during refrigeration, rub a small amount of lemon juice on the pineapple s freshly cut edges. NUTRITION/HEALTH/WELLNESS: Rich in Vitamin C, a one-cup serving of pineapple provides more than a day s worth of suggested dietary needs. Pineapples are naturally cholesterol free and provide a good source of fiber. Pineapples are also loaded with calcium, potassium, iron, copper, phosphorous, zinc, and magnesium. Magnesium is an essential mineral that regulates proper organ function. FUN FACTS: Pineapples are rich in the enzyme bromelain that helps breakdown protein. In food preparation, this makes a wonderful natural meat tenderizer, well-suited for grilling! Instead of discarding the blue spikey crown leaves, grow own pineapple plant by removing as much of the golden flesh as possible from the leaves, then strip off a few of the leaves at the base to expose the root stem. Sit the leafy stem upright for a week to dry, then plant the crown in potting mix and watch it grow! Grow the plant in a sunny, warm and moist environment. In time, a red cone flower will appear in the center of leaves and will eventually turn into a fruit. Pineapples are not only an excellent fresh food source in the produce department, but because of its storage versatility, pineapple can also be found throughout the commissary as a juice, in fruit cups, as a dried fruit, or canned in slices, chunks, or tidbits.

9 Meat Case Sweet and Spicy Chicken Ingredients: 6 servings 2 lbs. boneless chicken breast or thighs 2 cups fresh pineapple chunks 2 tbsp. soy sauce ¼ cup Freedom s Choice TM chili sauce ½ tsp. garlic powder ½ tsp. onion powder ¼ cup water or broth 1 tbsp. sesame oil Green onion Directions: 1. Cut the boneless chicken into 1-2 inch chunks. 2. Mix the chili sauce, liquids, and spices in a small bowl. 3. Add the oil to the bottom of the pressure cooker and bring to temperature. Add the chicken and then brown for 1-2 minutes. 4. Pour the chili sauce mixture over the chicken and then add the pineapple chunks. Bring the cooker to pressure. Cook for 7 minutes and then quick release the pressure. 5. Garnish with sliced green onion and serve alone or serve it on top of a bed of greens or with brown or wild rice. 10 Produce Stand Refreshing Pineapple and Greens Ingredients: 4 servings 2 limes 2 garlic cloves, minced 2 very ripe, soft avocados 2 tbsp. extra virgin olive oil 1 tbsp. balsamic vinegar Pinch of salt 3 cups fresh pineapple chunks 5-6 cups field green salad mix 1 large English cucumber, cut into large chunks Directions: 1. In a very large mixing bowl, place the pineapple, greens and English cucumber and toss. 2. Place the green flesh of two avocados in a blender, along with the garlic, oil, vinegar, and salt. Roll the limes with a little pressure on a hard surface to soften. If desired, zest one lime, and place the zest in the blender. Cut the limes in half and squeeze the juice of 1½ limes into the blender. Pulse the blender until the avocado mixture is smooth and the ingredients are well blended. 3. Slice the remaining ½ of the lime into four piecees and use as the garnish. 4. Serve ¼ of the salad mixture on a plate and drizzle with ¼ of the dressing. Repeat for the remaining three plates. Tips: Source: Defense Commissary Agency Do not drizzle the dressing onto the salad until just prior to serving. If not serving all four servings, place the dressing in a covered container. It can be stored for up to 3 days. To add protein to this salad, consider black beans or cooked boneless chicken breast. This makes for a great lunch time meal. Sprinkle a few slivered almonds or crushed walnuts on the salad to add a little more Omega 3 s and healthy fat. Just a few to keep the calorie level of the salad in check. Quaker 18 oz. Quick Chicken Noodle Soup Ingredients: 4 servings THINKING OUTSIDE THE BOX It never fails, there always seems to be something in our diet that is the root cause of all problems. Each macronutrient (carbohydrate, fat, protein) has taken a turn serving in this role and had the distinction of being a demon, then savior, then demon again. This is especially true of carbs. First and foremost, carbohydrates do not make people fat. Excess calories do. Yes some foods that have carbohydrates may not be the best in nutritional quality. They may be highly processed with an excessive amount of empty calories. However, this is also the case with some foods high in protein and healthy fats. An empty calorie carbohydrate would be added sugars like the sugars added to baked goods and other items to make them taste better. Sugars occurring naturally in fruits and milk are not considered empty calories. Ideally, to assure that body is nourished, an eating pattern should consist of mostly high-nutrient quality foods. Yet, if one eats 100 percent clean foods or perfect nutrition quality but too many calories, weight will be gained! A balanced eating pattern manages both the amount of nutrients and the calories. Should you limit carbs or cut them out of diet? For most of us, the answer is yes and no. You should limit the empty calorie carbohydrates, but should include the high nutrient quality ones in diet. High-nutrient quality carbs provide fiber, key vitamins and minerals and are low in unhealthy fat such as whole grains, whole fruits, vegetables, and legumes and even low fat dairy products without added sugars. Yes there are success stories from many people who have lost a great amount of weight following a low carbohydrate diet. But for most, the weight is gained back once they return to their normal eating pattern. This isn t to say that a low carbohydrate diet doesn t have a place for those managing conditions and for those that are currently obese while under the guidance of a medical professional. Although, for the general public, a low carbohydrate diet shouldn t be used or promoted to prevent obesity. A balanced eating pattern that focuses on the nutrient quality of foods, optimal proportions of macronutrients, and an energy level that promotes optimal nutritional status and weight should be the goal. Soups are a great way to use leftovers and a very simple strategy to build meals that focus on the nutrient quality of foods and include all the macronutrients. Believe it or not, there is a quick method for soup that makes a budget-friendly, nutritious meal that tastes like it simmered all day on the stove. All it takes is a little creativity and keeping a few starter items on hand. Care should be taken to avoid excess empty calories in soup from unhealthy fats and sugars while also watching the sodium level. The best way to keep fat and calories in check is to use lean protein meats and poultry or drained and rinsed canned legumes/beans. Limit added sodium by using fresh or frozen vegetables that are not in a sauce and/or low-sodium canned vegetables that have been drained and rinsed and low-sodium broth. Instead of using salt for seasoning, add a variety of flavors by experimenting with spice and herb combinations such as garlic, pepper and rosemary or curry and garlic or chili powder, pepper, cilantro and garlic. The varieties are endless! 32 oz. low-sodium chicken broth 15 oz. frozen mixed vegetables 1 small yellow onion 2 bay leaves (optional) 8-10 oz. of boneless chicken strips, frozen 5-6 oz. whole wheat or whole grain penne pasta Pepper Garlic powder Dried basil Directions: 1. Pour the chicken broth into a large pot with the frozen mixed vegetables and bring to a boil on the stove over medium-high heat. (If you have bay leaves on hand, then add two to the pot.) 2. While the broth and vegetables are simmering, dice the onion. 3. Place the frozen boneless chicken strips in microwave-safe dish with 1 cup of water and the diced onions, cover and microwave on high for 2 minutes. 4. Remove the chicken from the microwave, cut into bite-sized pieces, and add the chicken and the onions with liquid to the pot. 5. Add box of penne pasta to the pot of broth, chicken, and vegetables. 6. Turn down the heat to prevent the liquid from boiling over and simmer for about 8 minutes or until the pasta is tender. Season to taste with pepper, garlic powder, and just a few dashes of dried basil. 7. Serve this hearty soup in a deep bowl alongside a piece of favorite fresh fruit. Notes In step 3, the chicken won t be fully cooked. It will finish when added to the soup. Freeze individual servings for a quick after school or late evening snack or tote to work. Keep a container in freezer and rather than throw out a few bites of leftover veggies such as corn, green beans, lima beans, etc., put them in the container.
