2 VEGAN Turducken Recipe Kabocha/Acorn a/acor orn Squash - 1 Granny Smith Apple - 1, Large quartered Portobello Mushrooms - 2 Earth's Balance Buttery Caps, ribs removed Spread Field Roast Apple Sage Olive Oil Sausage - 2 sausages, cut into Apple Cider, 2 Cups 1/2 inch half circles Flour, 1-2 Tbsp Gusta Classico Roast - 1 Walnuts, 1/4 Cup roast, cut down to fit the Poultry Spice portobello Thyme O Doughs Vegan Bread - 4 Rosemary slices, cut in 1/2 inch cubes Salt Celery - 3 ribs, diced Pepper Onion - 1/2, diced Ground Cinnamon Parsnips - 2 medium parsnips, cut into 1/2 inch slices Ground Cloves Ground Nutmeg 1. Preheat Oven to Toss Apples & Parsnips with Olive Oil. Season with Salt and Pepper. Roast for minutes until tender. 3. Rub Portobello with Olive oil, 1/2 tsp Thyme, 1/2 tsp Rosemary, Salt & Pepper to Taste. Roast for minutes until tender. 4. Place apples, parsnips and walnuts in a food processor or blender and blend to a coarse puree. Add water or mushroom stock if more liquid is needed. (Optional: Add a dash of nutmeg). Fill the Portobello caps with the parsnip puree. 5. Fry the onion and celery in 2 tbsp olive oil and 1 tbsp Buttery Spread, until translucent. Add Field Roast sausage and sauté 3-4 minutes, until browned. Season with Salt and Pepper. Add 1/2 tsp poultry spice. Mix in the bread cubes. Remove from heat. 6. Thinly slice the top off of the squash and reserve. Scoop out the seeds and innards. Depending on the thickness of the squash, you may have to scoop out excess flesh, to make the mushrooms fit. 7. Place some of the bread stuffing inside the roast, making a 1/4-1/2 inch layer. Place one Portobello cap face up on top. Place Gusta roast on top. Repeat with a Portobello face down and bread stuffing on top. Stuff more bread stuffing down the sides to ensure the squash is full. It's fine if the stuffing is around a 1/2 inch above the top of the squash. 8. Replace squash cap on top of the squash. Drizzle the squash with oil. Roast for minutes until the squash is tender. Remove from oven and let cool for 5-10 minutes. 9. Slice either in flat sections or in wedges. Serve with Apple Cider Gravy: Heat 3 tbsp of Earth's Balance in a saucepan until frothy. Add flour to desired thickness. Add 1/2 tsp poultry spice, 1/4 tsp cinnamon, 1/8 tsp clove and 1/8 tsp nutmeg. Cook for 1-2 minutes. Add Apple cider in 1/2 cup increments, whisking the mixture until smooth. Season with salt and pepper to taste. Butter Sugar Eggs Vanilla White Flour Baking Powder Baking Soda Ground Cardamon Salt Sour cream Walnut Topping Brown Sugar Cinnamon Chopped Walnuts 640g 520g 8 4tbsp 1250g 1tbsp + 1tsp 1tbsp + 2tsp 1 tbsp 1tsp 4cups 60g 1tbsp 60g 8 x 415g Loaves 1. Mix the topping and set aside 2. Place the butter and the sugar into the mixer, and cream well. 3. Add the eggs and the vanilla and mix until combined. 4. Starting with the flour mixture, add in half the flour and mix well. 5. Then add 1 Cup of the sour cream and mix well. 6. Add the remainder of the flour and mix well. 7. Place 200 gr of batter into the Cake liner, Smooth with a wet spatula 8. Add 2 tsp of the walnut topping all over the batter. 9. Place 215 gr of batter on top of the walnut topping. 10. Smooth out the batter with a wet spatula. 11. Sprinkle the top of the loaf with 1 tsp of walnut topping. 12. Cook in a 300-degree oven for 1 ½ Hours, until the toothpick comes out clean. 13. Cool and wrap.
