2 A TASTE OF GREECE Greece invokes images in all of us of crystal blue water, stonewashed white buildings, jaw dropping scenery and taste bud-tantalising food. If you have ever had the pleasure of visiting this stunning country, then you know that food is a serious business. Think souvlakis, feta, moussaka, dolmades, and fresh grilled seafood. Real Greek food is super fresh and mouthwateringly tasty. Greek food in New Zealand is often altered to cater to local tastes, however you can t go past the real deal. It is best to keep your flavours as authentic and fresh as possible. Greek style foods are a hugely popular menu item, and ideal for the kiwi summer. Add feta and olives to your salads, tzatziki to your wraps, fresh herbs and lemon to your meat marinades for that touch of the Mediterranean. Zucchini blossoms are a popular ingredient in Greece, and since we have an abundance here in New Zealand over the summer months this is an interesting recipe that is a real stand out! Zucchini bloosoms should be harvested in the morning when they have just bloomed. They should be stored in warm water and then hung upside down to dry. These are a real delicacy and gorgeous battered and fried just as they are or stuffed with a filling of your choice. Try them stuffed with rice for an exceptional crowd pleasing appetizer: 2

3 INTERNATIONAL FOOD STUFFED ZUCCHINI BLOSSOMS Ord thro er now ug Conn h Fresh ectio n Ingredients: Method: zucchini/courgette blossoms ¼ cup extra virgin olive oil 1 large onion, diced 2 cloves of garlic, crushed 1 grated zucchini/courgette 2 ripe tomatoes, peeled and grated 1 cup Arborio rice ¼ cup dry white wine* 1/2 cup chopped fresh parsley 2 Tbsp. chopped fresh mint 2 Tbsp. chopped fresh dill salt and pepper to taste 2 cups of hot vegetable stock Pre heat oven to 180. Start by trimming the stem and any outer leaves of the blossom. Soak in warm water for about ten minutes then hang upside down to dry. Sauté the onions and garlic in the olive oil and then add the tomatoes. Next add the rice, wine and the zucchini and simmer for 15 mins. Add the herbs, combine and then remove from the heat. Season with salt and pepper. You will need a large oven proof dish with a lid to cook in. You can line this with any spare slices of zucchini. Stuff each of the blossoms with approximately 1tsp of the rice mixture. Folding the petals inwards will seal the top. Place all the blossoms in the dish and then add the stock and some extra oil. Cook for about 30 minutes. Delicious served with some tzatizki and a sprinkling of Paprika! Add a little luxury to your menu this New Years Eve and add some flair that your customers will remember you for well into 2015! Create something that is sure to create a buzz on social media and gain some free PR from your event! Think blinis with salmon and herb garnishes, prosciutto-wrapped shrimp, mini quiches with gorgonzola and walnut, mini spring rolls, deep fried ravioli, crostini with whipped feta and cherry tomatoes. Sliders are always a crowd pleaser: a great way to feed large groups and keep them coming back for more. Try this recipe that also features pulled pork another popular menu item this summer. French Bakery Slider Rolls 10 Pack 5s Gilmours Crushed Ginger 1kg Gilmours Crushed Garlic In Oil 1kg Pantai Fish Sauce 750ml Kikkoman Soya Sauce 3 Litre Lee Kum Kee Hoisin Sauce 2.2kg Chelsea Caster Sugar 4kg Pulled Pork Sliders recipe Ingredients Pulled Pork 1 onion, roughly diced 1 x 2 kg skinless pork shoulder 1 stalk lemongrass, bruised 2 garlic cloves, crushed 2 tbsp grated ginger ½ cup hoisin sauce ½ cup rice vinegar 1 tbsp fish sauce 1 tbsp soy sauce 2 tbsp sugar 24 small slider buns Coleslaw 2 cups red and white cabbage 1 small carrot, peeled and shredded or finely grated 6 snow peas, trimmed and thinly sliced on the diagonal ½ cup coriander leaves ½ cup mint leaves 2 green shallots, thinly sliced on the diagonal ¼ cup rice vinegar 2 tbsp caster sugar 2 tbsp fish sauce 1 garlic clove, finely chopped 1 small red chilli, seeded and finely diced METHOD Spread the onion over the base of a slow cooker and place the piece of pork on top. Cut the meat in half if need be. Add the lemongrass. Combine the garlic, ginger, hoisin sauce, vinegar, fish sauce, soy sauce and sugar, stir to combine, pour over the pork and place the lid on the cooker. Cook for 8 hours at a low heat. The pork should fall off the bone when ready. Place onto a large tray that will collect the juices and gently tease and pull the meat apart with your fingers or two forks. Remove any excess fat. Combine the meat with any of the juices. Cover and keep warm. To make the Asian slaw, in a large mixing bowl toss together cabbage, carrot, snow peas, herbs and shallots. Combine rice vinegar, sugar, fish sauce, garlic and chilli in a jar and shake until sugar has dissolved. Just before serving toss the dressing through the slaw ingredients. Slice open buns and lightly toast, top with a spoonful of the pulled pork mixture and a spoonful of the slaw. Garnish with fresh coriander. Serve immediately. 4
