Or, put one in the car if you don t have one there. The folks that work in emergency rooms and medical offices indicate that this time of year brings an increase in scrapes, bumps, cuts, and bruises. A wellstocked, and handy, first aid kit can take the stress off when those outdoor accidents happen. Here are some good ideas of things to have in your first aid kit: Acetaminophen or aspirin tablets for headaches, pain, and simple sprains. (Remember: never give aspirin to children under 18.) Calamine lotion for insect bites. Or other similar soothing lotion or cream. Antihistamine for mild allergic reactions...benadryl, epi-pens, Prenisone, etc. Roll of absorbent cotton to use as padding with a splint or in case of serious bleeding. Instant acting chemical cold packs to ice sprains, bruises, or for treating high fevers or heat exhaustion. Elastic wraps for wrapping strained or sprained ankles, elbows, or wrists. Adhesive bandages in assorted sizes to cover minor cuts and scrapes. Antibiotic ointments for minor cuts, scrapes and wounds. Sterile gauze bandages and pads to dress wounds. White adhesive tape. A breathing barrier with a one-way valve. Thermometers non-mercury, nonglass. Non-latex gloves. continued on page 2
2 Scissors, tweezers, and safety pins. Isotonic eye wash and eye cup to rinse small particles from eyes. Any personal and specific medications and items. Emergency contact phone numbers for your health care providers. Flashlight and batteries. Blanket and ground cover. Hand sanitizer and external cleaning wipes. Pressure Canner Lid Gauge Testing Do you realize that canning season is just around the corner. Don t wait until you need to use your pressure canner and realize you need the gauge tested. Drop your lid(s) off at our office any week day, Monday through Friday, 8 a.m. to 5 p.m. We will call you when the lid (s) are ready. Cost is $2.00 per lid. Ziplock and plastic bags. Antidiarrheal medication. Aloe vera gel. Cough and cold medication. First aid manual. You may also want to include duct tape, whistles, or water purification devices or tablets depending on your additional interest in emergency preparedness. Remember: Emergencies can happen anytime, anywhere, so being prepared for one is important for you and your family. ~Teresa Hunsaker Taco Salad ½ pound lean ground beef 1 onion, chopped 1 teaspoon chili powder 1 teaspoon cumin 1 teaspoon oregano 1 can (15 oz.) kidney beans, drained and rinsed ½ of 15 oz. bag tortilla chips 1 head romaine lettuce, chopped 2 tomatoes, chopped ¾ cup cheese, grated Dressing: 3 tablespoons vinegar ¼ cup oil ½ cup catsup 3 tablespoons sugar ⅛ teaspoon garlic powder ⅛ teaspoon onion powder ½ teaspoon salt Mix salad dressing ingredients and set aside. Brown ground beef and onion; drain fat. Add chili powder, cumin, oregano and kidney beans; mix well. Crush tortilla chips. In a large bowl, combine lettuce, tomatoes, cheese, and crushed chips. Add meat mixture and enough dressing to coat salad; mix well. Yield: 6-8 servings. 2
3 Family and Consumer Science Events Home Buyer Education Classes Saturday, May 6, 9:00 a.m. to 3:30 p.m. Saturday, June 10, 9:00 a.m. to 3:30 p.m. All classes are held at USU Extension Service, 1181 N. Fairgrounds Dr., Ogden. $25 per household for certificate. These classes help prepare people for the home buying process. The curriculum covers mortgage options, finances, housing choices, etc. Call to register. Canning Classes Aug. 15, 10am. - 6 pm. Canning tomatoes and tomato mixtures (salsa included). Day class and repeated evening class. Sept. 19, 6 pm. Pressure Canning Evening only. Classes will be held at the Extension Office, 1181 No. Fairgrounds Dr., Ogden. Watch for more details in the coming months. Camp Build Your Bucks June Noon 8-11 year olds 1-4 pm year olds Cost: $40 for the week This summer camp is designed to help youth understand more about earning money, saving money, and spending money wisely. We will have plenty of fun, activities, and learning in an interactive and upbeat environment. Snacks and learning reinforcements provided. Master Food Preserver Course June 1, 2, 6, 7, 8 & 9 8:00 am. - 2:00 pm. Cost: $130/person. Here it is, an in-depth series on food preservation! This Master Food Preserver Course is intended to help you feel very confident in all areas of food preservation pressure canning, water bath canning, dehydrating, and freezing. We will study the food science behind why we do what we do in preserving food, for optimum food safety. You will learn why methods have changed, why grandma s recipe isn t safe anymore, and how to master the art of food preservation to assist you in taking advantage of produce to save on your grocery dollar. The course consists of six different days with both lectures and labs. No previous experience is required to take this course. It is designed for young and not so young, those who have canned for years, and those who are just starting out. It is so much fun!!! Plus, we get to taste samples and even take a little home. The course is also designed to provide certification for those interested in being a Master Food Preserver volunteer. At this level of completion you will be able to take and answer canning calls during canning season, give demonstrations to groups in the community, and test pressure canning lids for accuracy. In order to receive certification, participants will be required to attend all classes and take an exam.. COST: $130 full course or $25 per day for full days and $12 for half days. Full cost covers: canning guide book, binder, training material, food supplies, apron, and lots of fun. You can attend just one day offerings, and cost for that day covers food and recipes for that day. LOCATION: South Ogden Junior High FACS kitchens, 650 East 5700 South, South Ogden. 5 4 Reasons Date Nights Matter Summertime is a great time to spend building memories as a family, but don t forget to also take time for a one-on-one date with your sweetheart too! While it can be a challenge to make arrangements or take the time to get away together research has shown that having date nights can strengthen your relationship in the following ways: 1. Communication. Time to talk can provide opportunities to reconnect and discover your partner s newest interests and dreams. 2. Having fun together. Date nights provide an opportunity to get out of the routine, build happy memories and rekindle the spark that can help to sustain couples through the tough times. 3. Strengthen commitment. Setting aside time to go on a date demonstrates your commitment to each other and sets an important example to children or others that you value your relationship. 4. Stress relief. Date nights allow couples to enjoy time together apart from the pressing concerns of ordinary life. In order to make the most of your time together consider the following tips: 1. Make an effort to plan your date in advance, and if needed budget so you can put money towards some nice evenings out. 6 What s Happening with Food $ense? May-June 2017 FREE Classes for EVERYONE!! It s Time for Salad! Spring is here and the weather is beautiful. There is nothing better than a nice crisp, refreshing salad. The first thing you need to make a wonderful salad is some delicious lettuce. There are many types of lettuce you can use. Some of the most common types are leaf lettuce, romaine, crisphead, butterhead and stem (also called asparagus lettuce). Ice berg lettuce is the most popular lettuce in the United States. It is a head lettuce that is also low in nutritional value and flavor. The most abundant nutrient in iceberg lettuce is water. Dark green lettuce leaves always indicate higher fiber, flavor and nutritional value. Lettuce is naturally saturated fat free, cholesterol free, and sodium free. It is also very low in calories, high in vitamin A, and a good source of folic acid. When choosing lettuce look for dark green leaves. Choose lettuce heads that are compact and firm. When washing your lettuce, rinse it with cold water or soak loose leaves in cool water and stir with your hand to remove dirt. Lay lettuce leaves on a paper towel and gently pat dry. To make the drying process quicker you can use a salad spinner. This kitchen gadget is a great tool to have and usually costs between $10-$30 depending on the brand. To store greens, wrap them in a slightly damp paper towel and place in the refrigerator in a plastic bag with holes for air. A clean grocery sack or a gallon sized plastic bag works well. If stored properly, most greens will keep for one week. Romaine lettuce can last for about 10 days. When you are going to prepare your salad, tear lettuce into edible pieces. You can use a knife to chop lettuce if preferred, but that may make the lettuce brown quicker if it is being stored for a few days. One of the main reasons people end up throwing away spoiled salad is because they forget about it and aren t using it regularly. Try and keep it where you can see it. Also, salad greens can go with almost anything; tacos, sandwiches, hamburgers, lettuce wraps. Get creative and try adding greens to new things. Adapted from Food Sense How to Nourish with Salad Greens Spinach Salad with Poppy Seed Vinaigrette Cleaned, trimmed, dry spinach Add salad toppings as desired such as: Green apple slices Orange sections Strawberry slices Pecans, walnuts, or almonds Raisins or dried cranberries Sunflower seeds Feta cheese Toss ingredients together and serve with poppy seed vinaigrette. Poppy Seed Vinaigrette: 1/3 cup canola or olive oil 1/3 cup rice, balsamic, raspberry vinegar 1/3 cup honey or real maple syrup 1 tablespoon Dijon mustard 1 teaspoon poppy seeds Whisk ingredients together or shake in a jar and toss with salad. A little bit of this dressing goes a long way. Check out another great salad recipe on page 2.
