You meals will be simple to make, many of them with components that can be efficiently prepared ahead of time. 5 BALANCED ACCELERATOR ADVANCED FOOD PREPARATION BALANCED ACCELERATOR ADVANCE FOOD PREPARATION Dedicating time once a week for shopping and prep work will make preparing the meals for the rest of the week effortless and enjoyable. VEGGIE STOCK To be used for grains or for poaching fish or chicken. Wash and coarse cut the following vegetables, then add to an 8 qt. pot: 2 onions, 4 cloves garlic, 3 stalks celery, 3 carrots, 1 cup mushrooms, and 1 small zucchini. Cover with water and simmer for 1 hour; then strain. Cool to room temperature and keep in a sealed container in the refrigerator. BAKED TOFU Thaw 2 (3) 12 oz. containers of frozen apple juice concentrate in a large re-sealable tub. Add 4 (6) cloves chopped garlic and 2 (3) teaspoons dried oregano. Cut the extra firm tofu into cubes and arrange in the tub so all the pieces are covered with the marinade. Refrigerate for at least 4 hours or overnight. Drain the tofu and place in a 375 degree oven for 30 minutes or until golden in color. Cool and keep refrigerated; marinade can be re-used. RAW VEGETABLES By prepping the vegetables ahead of time, it will be quick and easy to prepare your meals for the rest of the week. Store the vegetables separately in zip-lock bags: 2-1/2 lbs. Carrots cleaned and trimmed, cut into 2" sticks. 1 lb. Carrots, cut into 1" sections. 1 small head of Cauliflower, cut into florets 2 medium Yellow Squashes, cut in half and then into 1" lengths 3 medium Zucchinis, cut in half and then into 1" lengths 1 bunch Radishes, washed and trimmed 2 medium Yellow Onions, peeled and cut into quarters 2 medium Red Onions, peeled and cut into quarters 1 medium Fennel Bulb, trimmed and sliced thin (reserve feathery tops) 1 medium Cucumber, peeled and cut into 2" sticks 1 small Jicama, peeled and cut into 2" sticks 1 bunch Swiss Chard, cut into 2" lengths 1 Garlic Bulb, peel the cloves and leave whole 2 5" pieces of Gingerroot, peeled 1 small Eggplant, leave whole 1 medium Delicata Squash; leave whole (or substitute small Butternut squash) 2 boxes Button Mushrooms, cleaned with a paper towel, only wash when using 2 medium Beets, peeled and quartered 2006 Elizabeth Dane, Ph.D., O.M.D. All rights reserved. 6 BALANCED ACCELERATOR ADVANCED FOOD PREPARATION SEAWEED Cook the seaweed of your choice according to the instructions on the package. Drain and refrigerate. It may be served hot or cold. BALANCED ACCELERATOR ELIXIRS Store cleaned vegetables in zip-lock bags and making juice will be easy and fast. For one week you will need the following to make all 4 elixirs: 4 lbs. carrots, 1 bunch celery, 5 bunches parsley, 1 head romaine, 2 lbs. spinach, 2-1/2 boxes alfalfa sprouts. SALAD GREENS Salad greens should be washed and torn into bite sized pieces; then dried in a salad spinner. Wrap greens in paper towels and place in large zip lock bags with the air squeezed out. Enough greens should be washed for only 3 or 4 days, they will last no longer. Certain greens must be washed at the time of use or they will perish once they are wet. These would include arugula, basil, and sprouts. Certain vegetables will begin to deteriorate once they are cut and should only be processed before the meal: Mushrooms should be washed and sliced. Eggplant should be cut in half, the bottom round cut into three 1/2" (1") slices, and the top cut into cubes. Delicata squash should be split lengthwise and the seeds scooped out. For grated carrots or zucchini, use the carrot or zucchini sticks in a hand or mechanical grater. DANE S TROPICAL FRUIT STARTER Clean and prepare these fruits and store them individually; use them as you need them: 4 (7) Pineapples, peel, core, and sliced 2 medium (lg.) Papaya, peeled and diced 8 Kiwi, peeled and sliced 4 (7) Pears washed, cored and cubed 4 Mangos peeled and cubed 2-1/2 (4) pints Strawberries; clean and de-stem, slice as needed 1 dozen Limes 1/2 dozen Lemons BALANCED ACCELERATOR ZING DRESSING Combine 1 cup safflower oil, 1/2 cup lime juice, 4 cloves garlic, 4" gingerroot chopped, 1 tsp. each of dry oregano and thyme. 7 DAY 1 BALANCED ACCELERATOR DAILY MENU AND RECIPE COLLECTION Upon Rising - Lemon-Lime Splash Combine and drink the juice of 1/2 lemon and 1/2 lime mixed with 4 oz. warm spring water. Breakfast - Dane s Tropical Fruit Starter Combine 1/2 cup each of fresh: mango, (1 cup) pineapple, (1 cup) strawberries, (1 cup) pears and 1 kiwi. Drizzle with 2 tbsp. low fat coconut milk. Herbal Tea. Mid-Morning - Cranberry Spritzer Drink 6 oz. of salt free seltzer, mixed with 2 tbsp. cranberry juice concentrate and the juice of 1/4 lime. Herbal Tea. Lunch - Raw Vegetable & Sesame Tofu Toss 1 cup (2-3 cups) salad greens and 1/2 cup sprouts with 1 cup Nappa cabbage and add to a large plate. Grate 1/2 cup carrots and 1/2 cup zucchini, toss with 1 tsp. Zing dressing and place next to salad greens. Add 1/2 cup (1 cup) roasted tofu to the plate and serve with 1/2 tbsp. sesame dressing. Half Hour After Lunch 1/2 cup (1 cup) papaya. Herbal Tea. Mid-Afternoon - Cranberry Spritzer Drink 6 oz. of salt free seltzer, mixed with 2 tbsp cranberry juice concentrate and the juice of 1/4 lime. Herbal Tea. Dinner - Fanciful Fish Dinner [Be sure to cook the whole piece of halibut and slice off 2 oz. (6 oz.) to be served cold for tomorrow s lunch] To a 2 qt. pot, add 1/2 cup (2/3 cup) veggie stock, 1/2 cup onion, 1/4 cup fennel and 1/4 cup of mushrooms. Top with 1 cup (2 cups) root vegetable blend and 1 cup of cauliflower tossed with 1 tbsp. chopped fennel tops (looks like dill). Cover the pot and steam for 4 minutes. Remove the cauliflower from the pot and puree with 1 tbsp. of the hot liquid using a hand held blender. Remove the root vegetable blend and serve it and the cauliflower with 2 cups mixed greens, 2 sliced radishes and 2 tsp. Zing Dressing on the same plate. Add the fish to the pot, cover and steam for 7 minutes. Serve the fish with the hot vegetables and pour any left over stock over the fish. 8 DAY 2 BALANCED ACCELERATOR DAILY MENU AND RECIPE COLLECTION Upon Rising - Lemon-Lime Splash Combine and drink the juice of 1/2 lemon and 1/2 lime mixed with 4 oz. warm spring water. Breakfast - Dane s Tropical Fruit Starter Combine 1/2 cup each of fresh: mango, (1 cup) pineapple, (1 cup) strawberries, (1 cup) pears and 1 kiwi. Drizzle with 2 tbsp low fat coconut milk. Herbal Tea. Mid-Morning - Cranberry Spritzer Drink 6 oz. of salt free seltzer, mixed with 2 tbsp. cranberry juice concentrate and the juice of 1/4 lime. Herbal Tea. Lunch - Raw Vegetables, Poached Fish & Lemon Toss 1 cup (2-3 cups) cleaned salad greens with 1/2 cup alfalfa sprouts and 2 sliced radishes. Add 1/2 cup each sliced cucumber and sliced fennel. Toss the salad with 2 tsp. Zing Dressing and place on a plate. Serve with 2 oz. (6 oz.) of the cold fish made the previous evening with 1/2 lemon along the side of the salad. Half Hour After Lunch 1/2 cup (1 cup) pineapple. Herbal Tea. Mid-Afternoon - Cranberry Spritzer Drink 6 oz. of salt free seltzer, mixed with 2 tbsp. cranberry juice concentrate and the juice of 1/4 lime. Herbal Tea. Dinner - Invigorating Vegetable Dinner Mix 2 cups salad greens with 1/4 cup grated jicama and 1 tsp. Zing Dressing; place on a dinner plate. Combine 1/2 cup (1 cup) cooked wheat-berries with 1/2 cup diced zucchini, 1/4 cup shredded basil and 1/4 cup diced red onion. Mix and add 1/4 cup (3/ 4 cup) baked tofu and toss with 1 tsp. dressing Zing Dressing and place next to the salad. Place 1 cup of the root vegetable blend in a pan and add 1/4 cup water; then cover and steam for 4 minutes. Serve with lemon along the side of the salad or in a separate small dish. Serve with 1 glass Spring Cleanser Elixir. In your juicer, juice 6 carrots, 1 head lettuce, 2-3 boxes alfalfa sprouts. Combine the juices and add 2 oz. water and serve.
