4 Menu Building with 2TouchPOS Liquor Build Overview This chapter covers 2TouchPOS topics, liquor build, menu building including departments, categories and menu items. Modifiers and modifiers groups will be explained in terms of how they are related to menu items. Also, there will be a short section referring to different ways to price menu items. For more detailed explanation on pricing, which will include, topic of custom, groups and level pricing, see pricing and pricing special documentation. Below are specific concepts, with definitions, you will need to understand prior to building your menu using 2TouchPOS liquor build menu. Concepts and Descriptions Concepts DEPARTMENT: A broad menu group containing categories and menu items. Example: Beer, Beverage, Food, Liquor, Wine. CATEGORY: MENU ITEM: MODIFIER GROUP: MODIFIER: Types of Modifiers FORCED MODIFIER: OPTIONAL MODIFIER: Department are broken down into Sub Groups called categories. Example: If Food is the Department, then Categories might be Appetizer, Soup, Salad, Sandwiches, Entrees, and Desserts. A food, beverage or alcoholic menu item is grouped under a specific category and department. Example: Cheeseburger is a menu item. This group contains individual modifiers for different menu item toppings and temperatures. Example: Modifier group for cheeseburger could be temperature and burger toppings. Individual modifiers are single topping on a menu item, such as American cheese or lettuce. Each individual modifier will be categorized into a modifier group. Example: The Modifier Group Sandwich toppings could contain the following individual modifiers, lettuce, tomato, mayo, cheese, and mustard. Forced modifiers are used when menu items require a temperature or When a menu item is ordered, the Modifier Group will automatically display and force a selection of a modifier before continuing entering the customer s order. Example: If someone orders a steak, the Cook Temperature Modifier Group would need to be a forced modifier. Means that when the Menu Item is ordered, the Modifier Group will automatically display, but a selection is optional. Xenios 2013 Page 4

5 Example: If a customer orders a hamburger, the Food Modifier Group would need to be an optional modifier. AUTO MODIFIER: REQUISITION: Example of Rum & Coke: $4.00 drink will report that X percent will go towards soda category and the other will go towards rum category. Requisitions create paths for menu items to be printed at various printers within an establishment. For example: When a customer orders a draft beer, the default requisition attacked to draft beer should be bar requisition. The draft beer request will print at the bar printer. Menu Building Description 2TouchPOS organizes menu items into a hierarchy or tree structure. Menu items are organized into departments and categories. Each of the following sections will introduce you to department, categories and menu items 2TouchPOS structure and how they are used to create and establish your menu. Departments are broad groups containing a category, with multiple menu items. Departments can be considered the building block for creating and developing your menu. When building your menu, departments will be your first tasks. Key element to remember about departments is keeping them broad enough to create specific categories and individual menu items. For example, you can have a beer department with domestic beer as a category and Budweiser as a menu item. Below is a visual display of the menu building hierarchy. 6 Starting Building Your Menu from 2TouchPOS Liquor Build Department Overview There are many components to building a menu. 2TouchPOS s liquor starter build, provides a foundation to building your menus. Below, the screen shot shows pre-entered departments through 2TouchPOS liquor build. Looking at 2TouchPOS screen shot, left side, there are existing departments, beer, beverages. Below is an explanation of the 2TouchPOS department screen, with a screen shot to visually see where information will be inputted. Department Setting Screen Shot 1. Description Box represents where the new department name will be entered. (See example below) 2. Short Description Box (limited character space) a. Because the short description button has limited character (as seen below), you might need to abbreviate the new department s name. Below is a department setting screen shot of department description and short description. Tip: Once the new department description information has been entered into 2TouchPOS, touch the short description box and the new department name will automatically be copied from the description box to short description box. See example below: 3. Default Requisition Type Box a. When defining a default requisition, you are creating a path, where menu items will print. For example, a beer department default requisition type should be set to Bar Requisition, so when an employee enters an item under the beer department, it will be sent to the bar requisition printer. Reports As box refers to sales tax. (Questions about surcharge option, contact Tech Support) 5. Save Button a. Once the new department information is completed/entered, the save button will save and create the new department. Note: Default Requisition type refers to where a menu item, under a specific department, will be sent to a specific printer. Ex. If you order a hamburger, under the food department, the menu item could be routed to the default requisition type, kitchen printer. Categories Overview Categories are the second level to menu building hierarchy. Each category will have similar menu items listed, and each category will be assigned to a department. Similar menu items, pizza logs, sweet potato fries, should be listed under the same category, appetizers. Consider categories as a way to collectively group similar menu items. Xenios 2013 Page 7

9 1. Description Box is where the new category name will be entered. (See example below) 2. Short Description Box (limited character space) a. Because the short description button has limited character (as seen below), you might need to abbreviate the new category name. Below is a category setting screen shot of description and short description. Tip: Once the new department description information has been entered into 2TouchPOS, touch the short description box and the new category name will automatically be copied from the description box to short description box. See example below: 3. Select appropriate department from the pull down menu. A department is a broader categorization of categories and menu items. 4. Modifier Box, with a pull down menu providing different modifier group options for the new category. Modifier groups are a collection of individual modifiers, such as toppings, sides, and/or condiments, a customer would order on a menu item. For example, Cheese modifier group will consist of different individual cheeses like American, and blue cheese. a. From the pull down menu, choose appropriate modifier group (if necessary). If no modifier group is necessary then select None. Some category will not need a modifier group, such as draft beer. Xenios 2013 Page 9

10 5. Course (ONLY applies to food categories) Otherwise select None. 6. Button Color allows menu items on 2TouchPOS s speed and category screen to be more identifiable. Below is a screen shot example of menu items being displayed on 2TouchPOS speed screen. The orange button represent draft beer category menu items bud light DFT. The dark red represents bottle beer category menu item, like Stella Artios. Xenios 2013 Page 10

11 Audit Control Item Default - Tax can be Exempted Tax will not be charged on a menu item. Food menu items qualify for tax exemption. However, beer and liquor menu items tax is built into their pricing structure, where tax exemption will not apply. When creating a food category, you will check the tax exempt box, because food menu items can be tax exempt. Allow Last Round Checking this button allows bartenders to re-order menu items from a tab and/or table. When creating a beverage, beer, and/or liquor category, this box will be checked in order to allow re-order of menu items. Xenios 2013 Page 11

12 Setting up Beverage & Food Categories Beverages Categories Beverage categories will be similar menu item groupings of liquors, beers, draft beer, creating a beverage category begins with developing a hierarchy of a broad department name, with a category name narrowing (something). During your category development stage, users will need to input new category information into the description, short description, and department boxes. Description refers to name of new category and short description will refer to how the category name appears on a 2TouchPOS button whether it s on the speed screen or speed category screen. Following is a list of information you will need to consider when creating a new category: 1. What department will the new category are located under? 2. Create a new name for the category 3. If the new category names is long and does not fit into short description box, create an abbreviation for the category to be shown on the 2TouchPOS button. a. If draft was too long, the abbreviation would be DFT. 4. Re-select department 5. Select a button color 6. Audit Control Item and Allow Last round check each box to allow each function to work. Food Categories Creating a food category is slightly different from a beverage category, in terms of, information input into 2TouchPOS. Food categories will include modifier groups, course (if necessary), and tax can be exempted. Description refers to new category name and short description refers to how the category name appears on a 2TouchPOS button whether it s on the speed screen or speed category screen. 13 Following is a list of information you will need to consider when creating a new category: 1. Select a department 2. Create a new name for the category 3. If your new category names does not fit into short description box, create an abbreviation to be shown on the 2TouchPOS button 4. Select Appropriate department 5. Choose a modifier group a. Modifier groups are different toppings categorized by similar attributes i. Sandwich toppings modifier group could include individual modifiers as cheese, lettuce and so on. It is based on your menu item toppings. 6. Choose a course (if necessary) a. There are two choices, entrée and appetizer 7. Select a button color 8. If your new category names does not fit into short description box, create an abbreviation to be shown on the 2TouchPOS button 9. Audit Control Item and Allow Last round check each box to allow each function to work. Modifiers Modifier Groups and Individual Modifiers Modifier Groups are collections of individual modifiers categorized under one specific modifier group. Modifiers can be referred to as toppings, sides, and/or condiments a customer would order with their main menu item or automatically come with a menu item. A hamburger could come with onions, lettuce and mayonnaise, that could be classified under, the modifier group called, sandwich toppings. For example: Menu Item: Chicken Caesar Wrap Grilled chicken breast with Caesar dressing, romaine lettuce, onion, grated cheese in a spinach tortilla. BBQ Chicken Wrap Grilled chicken breast with blue cheese dressing, BBQ sauce, onion, lettuce & tomato wrapped in a sundried tomato tortilla. From this sample menu item, a possible modifier group would be called tortilla wraps which include individual modifiers of spinach & sundried and other possible types of tortilla shells. Another modifier group could be wrap toppings which includes individual modifiers, Caesar dressing, parmesan cheese or different tortilla. (If you offer different cheeses or tortilla with your bbq chicken wrap). Xenios 2013 Page 13

Menu items are under a specific category and department. For example, Bud Light Lime bottle beer menu item is categorized under the bottle beer category and beer department. Example: A cheeseburger cost When setting up a price for the cheeseburger menu item, you would use custom and set the price at Pricing Group to a Menu Item Pricing groups allows multiple menu items to be grouped under one pricing structure. Menu items that have the same price can use one price group, instead of individual setting up each menu item s price such as custom pricing. You can set your domestic bottle beer to $3.50, so Bud Light and Coors Light will be priced with the Bottle Beer #1 $3.50 pricing group. Pricing Levels to a Menu item Pricing levels function differently from custom or pricing groups. Custom pricing is a one set prices for a single ordered menu item and pricing groups are a range or set price for multiple menu items. Pricing levels apply to one single menu item with different sizes. When using pricing levels, you are creating a different pricing scale between sizes. (i.e. liquor menu items can be ordered in a single or double, draft beer menu items can be ordered in a pint or pitcher). An establishment will charge different prices for different sizes. By setting up a pricing level, different size menu items can be automatically set to charge different prices for different sizes for a single menu item. 17 Pricing Level Setting Screen Shot 1. Pricing Level box refers to the name of pricing level, ex. Liquor sizes 2. Level description refers to a size, i.e. single 3. Short refers to an abbreviation for the pricing level size, Sng is abbreviated for single. The short description box has a limited character space. Pricing Group & Pricing Level to a Menu Item Typically, pricing levels are used for liquor, draft beers and mixed drinks menu items because they can be ordered in different sizes, with different prices. Below, there is a 2TouchPOS pricing group setting screen shot. When a menu item can be ordered in different sizes, with different prices, there are components to a pricing group for menu items. It is recommended, when naming a pricing group, with a pricing level, to add prices to the name. (i.e. draft beer #1 $ ). The $3.50 represents draft beer pint prices and the $7.25 price represents pitcher prices. Pricing levels allow users to set up different sizes, with pricing group, where different prices will be set for the different sizes, for a menu item. Draft beer comes in pint and pitchers.
