2 PONZU Is a citrusbased sauce commonly used in Japanese cuisine. RELISH A relish is a cooked and pickled product made of chopped vegetables, fruits or herbs. SAKURA Japanese cherry blossom flower. SHISO A Japanese herb that belongs to the mint family. SHOCHU Is a Japanese distilled beverage less than 45% alcohol by volume. It is typically distilled from rice and or sweet potatoes. SHRUB The term for a vinegar syrup. SOJU Korean distilled beverage. SUDACHI Japanese sour citrus fruit. TOGARASHI Japanese spice and chili blend. UME Is generally referred to as a plum in English. Its more closely related to the apricot, but ume is by itself a Japanese fruit. UMESHU A Japanese plum wine made of the umeshu fruits and schochu, Japanese spirit. YUZU Japanese citrus fruit. WAGYU Wagyu, translates to Japanese cow. WAKAME Is a species of edible seaweed. WAKOUCHA Japanese black tea.

3 GLOSSARY INDEX AGAVEGAR A syrup mixture made from agave nectar and vinegar. CHICHA MORADA Is a beverage originated in the Andean regions of Perú made of purple corn. HIBISCUS Is a flower that is know both for its beautiful appearance but also its strong medicinal uses. GARI Is a type of pickled vegetable. It is made from sweet, thinly sliced young ginger that has been marinated in a solution of sugar and vinegar. GINSENG A rootplant believed to have energizing powers. GOCHUJANG Is a savory, sweet, and spicy fermented condiment made from chili powder, glutinous rice, fermented soybeans, barley malt powder and salt. HORCHATA A traditional Mexican beverage, is a rice drink flavoured with cinnamon and sugar that has a creamy appearance although there is no milk. KALAMANSI Asian citrushybrid with a tart bittersour flavour. LECHE DE TIGRE Is the citrusbased, spicy marinade used to cure the fish in classic Peruvian ceviche. MARACUYA A south American Passionfruit. MISO Is a traditional Japanese seasoning produced by fermenting soybeans. OLEO SACCHARUM Peels of fruit in sugar.
