In 1855, when William Morgan planned his substantial new malting complex on the (then) edge of Warminster town, he designed a superior structure which incorporated greater efficiency at every stage of the process. From walls built of stone (better insulation) to the 5ft ceilings on the germination floors (more stable temperatures), Morgan shunned Victorian grandeur in favour of industrial efficiency. It is not surprising that 160 years later this maltings continues to endure. William Frank Morgan, son of William Morgan, re-modelled Pound Street maltings in SUPERFINE BARLEY. Warminster town is one of the former malting capitals of the British Isles, sitting on the western tip of the Icknield Series soil type, the most perfect soil for growing malting barley. Top quality barleys grown across Salisbury Plain have sustained the maltings forever, and continue to do so. But some customers prefer local barley to their production we can do that too. 3 Care of the Process Floor Made, Naturally. Like all food processing, slower is better. Our maltings was designed to follow gentle procedures, allowing for the optimum expression of the barley s properties. The temperature of this water is a stable 52F, winter and summer alike, perfect for the first stage of the malting process. Steeping the barley in water over 3 days is critical to triggering germination, the next stage in the process. Ventilation and temperature control of the germination floors is vital to the modification of the green malt. We work with the ambient temperatures, closing the window shutters when it is cold, and opening them when it is warm. The layout of the malt houses with its central wedge-shaped courtyard is a blueprint of the classic Victorian maltings, all designed for purpose, exploiting nature s elements. passage of the green malt through the process still depends on muscle power rather than imported energy. The malt-stars are permanently armed with a malt shovel, from steep to kiln, with other hand tools (malt ploughs, turners and levellers) completing their inventory of processing aids. In 1905, Edwin Sloper Beaven, proprietor of our maltings and self taught plant breeder, bred the very first genetically true variety of barley in the world, named Plumage Archer. It was an enormous breakthrough, significantly raising both farm yields and malt quality, so much so that Plumage Archer dominated barley production right across the British Isles for the next 40 years. It is upon this bedrock that today s malting industry has been built. Plumage ESB Archer Dr. E. S. Beaven and left: Beaven s book, published posthumously in Maris Otter. Dr Douglas Bell, at the Plant Breeding Institute in Cambridge, carried on where Beaven left off, and 20 years later, based on Plumage Archer, introduced Maris Otter to farmers, maltsters and brewers in The sustained demand for this variety was identified, and harnessed, by our chairman, Robin Appel, in the early 1990 s, and he continues to oversee the production and supply of Maris Otter today. The outstanding qualities of this venerable variety, including the most compelling flavour profile, make it the most reliable malt. Modern Working Practices. Micro-malting... Following purchase of our barley supplies from the farms, these barleys are monitored every three months while they remain in store.

This procedure exactly replicates the process in the malt house, and allows us to pre-measure the malting potential of the barley as it stands....and Micro-brewing.

6 Magnifying Value in the 21st Century Oldest Working Maltings. Today, our magnificent and historic maltings is Listed Grade 2*, and our blanket restoration programme nears completion. At the same time, all new engineering has been neatly tucked into the original structures, including our latest investment, a new burner for our pressure kiln installed in Modern Working Practices. Micro-malting... Following purchase of our barley supplies from the farms, these barleys are monitored every three months while they remain in store. Prior to collection for malting, fresh samples are drawn for micromalting in our Warminster laboratory. This procedure exactly replicates the process in the malt house, and allows us to pre-measure the malting potential of the barley as it stands....and Micro-brewing. Then, again in our own laboratory, we are able to go to the next stage, namely mashing in. Our mashing bath allows us to measure the malt extract of the same barley.
