1 Infused Honey The simple infused honey Take a jar of liquid honey, ideally raw, and from the area where you live and add dry content, as in : dry orange peel, dry peppermint leaves, dried fruits. I couldn t really say the ratio, the more dry content you add, the stronger the flavor. Place the jars in a dry and dark area, away from direct sunlight. allow the honey to sit for at least a couple of weeks. For these jars, I added 2 tablespoons of dry content per jar, each jar has around 500cc volume. The creamed honey version Mix creamed honey with liquid honey on a 1:10 ratio. the creamed honey is a very fine crystallized honey, which I bought from Trader Joe s, of course, there are many other kinds out there. Mix it really well, so that it is uniformly done, and the crystals will form as fine as in the seed honey. Transfer to jars, place in a dark and cool place, at a temperature of 50-60F for about 2 weeks or until the whole jar is crystallized. The infused creamed version Combine the two from above.
2 Notes: I tried adding home dried fruits, like strawberries, which seems to be a good combo, because they dry well in the dehydrator. I also tried raspberries, which I knew from the beginning that it wouldn t dry properly, still, I mixed it with creamed honey and placed it in the fridge. Any fruits, that are properly dried, to a crisp, should work fine. The work life juggle

I always wanted to be a doctor, since I was a little kid. Maybe at times, I flirted with other ideas, like being a journalist, a physicist, a geologist, specifically a seismologist, but the background desire was to be a doctor. It took me many years to reach that point, because of various things that happened, but I am there now. Though I always dreamed of being in primary care and at times I still do, at the end of the residency, I opted for a hospitalist job. Because I thought the juggle would be easier, and I would have more time for family and life. Truth is when I work, that is pretty much all I do, with some
4 blissful exception days, when we, the hospitalists, have it better and we manage to get out of there a couple more hours before the 12 hours shift is finished. On those days, I have the beautiful illusion of having more time for family and myself. On the week off, life is good, of course, I am sure all the hospitalists would say that. However, the life as a hospitalist comes with its prices. I say prices for good reasons. As much as I like being a doctor, and being able to help fellow human beings and being there for them and their families through their tough times, it is mentally and emotionally exhausting. I got into this field because I appreciate kindness, compassion, and empathy in a human being, and I wanted to be the kind of doctor I would like to have. I cultivate these qualities and I place them higher than smartness. Anyways, sometimes, at the end of some days, I feel like I run empty on patience, kindness, and compassion sad but true. Because of whatever happens during that day, or during that week, and I won t go into details, because dealing with people when they are at their worst, it s just delicate business. So, the question is, how do I make it work, how do I replenish that energy, how to keep the balance? My answer is, by doing things that bring me joy, by doing things that make me feel creative, by diversifying. And stop worrying about what others think. Because I live my life and only I know how it s like to wear my shoes. So there you go, maybe writing a blog will bring me joy, maybe cooking and sharing a recipe will bring me joy, or reading a book, or drinking a cup of tea, or mowing the lawn, or planting and weeding, Maybe many things, because in the end, it s the attitude that brings the feeling.
