Do not sub corn flour for corn meal. Corn Meal made from dried corn, milled fine, medium or coarse. Traditionally stone-ground which makes the corn meal more nutritious by leaving some of the hull and germ of the kernel. It also has a higher fat content that makes it more perishable. Most corn meal is now ground by steel rollers which removes most of the husk and germ. Grits originally made from dried white corn, cooked with lime, dried and ground coarse (i.e. cured ). Now more generally manufactured as a more coarsely ground corn meal. Masa Flour made from hominy (dried, cooked corn with added lime) Polenta a dish that you make with medium or coarse ground yellow corn meal. If a corn meal has the word polenta in the description, it generally means it is coarse grain size, ideal for this dish.

12 SUGAR GLOSSARY 12 AA Confectioner s Crystals (special order) size 1100 microns large grain size, clear crystal. Ideal for toppings, baked goods. Not to be confused with confectionary or powered sugar. Agave (various #) Agave syrup is the same as agave nectar. Raw has not been pasteurized or heated. Though the syrup can come from several species of agave, the Blue is the most popular. Light is golden to amber and heated to about 151 degrees for a short time; whereas Dark is heated to 116 degrees for a longer period of time resulting in a deeper darker color. Forest Honeydew aka Honey in the Forest (Bosco) Raw Italy** - Great as a sweetener in teas and coffee; perfect for mulled wine. Produced between July and August. Very dark amber color with opaque reflexes from red to brown. The smell is strong with spices such as black pepper, juniper berries and cloves. 47 What is Baker s Percentage? Baker s Percentage is a calculation that allows you to increase a dough recipe, while maintaining the correct ratios. In short, you cannot just double or triple a dough recipe and hope that it comes out correctly. According to the Bread Bakers Guild of America ( it is critical to understand and respect these formulas to have a successful outcome. Flour is always 100% and the weight of each other ingredient is a percentage of the flour weight. It s really easy! The recipe must be in weight (not in volume). If you have a recipe with more than one flour, just add up the weights of the flours to make that your 100% base.
