15 Wedding Cakes Cake Tasting Tips Many of our cake and frosting flavors are available to purchase as cupcakes at either of our retail locations, with no appointment necessary. Additional cake and frosting flavors, as well as optional cake filling samples, can be purchased from our South Scottsdale location by calling and arranging a tasting appointment with a pastry chef. The charge for a tasting appointment varies, based on the quantity and type of desired samples. Wedding Cake FAQs Cakes larger than two tiers are not available at this time due to the limits of transportability. Cakes for serving behind the scenes to feed additional guests may be purchased without decoration at the GFC Favorite Design prices. All cakes are iced with the frosting of your choice. No fondant options are available. We offer a limited selection of non-edible decorations (please see GFC Favorite and Top Tier Cake Designs). We will be happy to incorporate into your design any additional gluten-free decorations that you wish to provide. All cakes must be picked up at the South Scottsdale location. 16 CAKE FAQs How far in advance should I place my cake order? It s never too early to secure your cake reservation. We recommend purchasing 6 round pre-made cakes by phone in advance as supplies are limited. Specialty Cake orders are taken on a first-come, first-serve basis. Where do I pick up my cake? Uninscribed 6 round pre-made cakes may be picked up at the North Phoenix location while supplies last or by ordering in advance by phone. Please call to reserve an uninscribed pre-made 6 cake for pickup at the North Phoenix location. Inscribed 6 cakes must be ordered in advance and pre-paid from the South Scottsdale location at , with pickup option available at either location. For quality assurance, all Specialty Cakes (9 round, ¼ sheet, ½ sheet, Top Tier Cakes, and Wedding Cakes) must be picked up at the South Scottsdale location, 7607 E. McDowell Rd. #108, Scottsdale 85257, at the Southeast corner of Miller Rd. Are your cakes single or double layer? 6 round Vanilla Sugared Tuxedo Cakes, Chocolate Velvet Tuxedo Cakes, and Vegan Chocolate Tuxedo Cakes are extra-tall single layers of cake frosted on the outside. 6 round Naturally Sweet Chocolate Tuxedo Cakes are double layer cakes with cane-sugar free chocolate frosting in the middle. All Special Order 9 round, ¼ sheet, ½ sheet, and Top Tier Cakes are double layer cakes (two layers of cake with frosting or optional filling in the middle) How big are the cake servings? Cake serving amounts are calculated based on an approximately 2 square slice or 2 wedge. How do I care for my cake? Please plan to pick up your cake 3-4 hours before you intend to serve it. In order to ensure that your cake travels well to your destination, we will keep it cold prior to pick-up. You will want to hold cakes that are frosted in Vanilla or Chocolate Frosting at room temperature (65-75 degrees Fahrenheit) 3-4 hours before serving so they will be soft for cutting. Cakes iced in Cream Cheese frosting should rest at room temperature 1-2 hours only before serving. Cakes iced in Whipped Cream frosting should be served cold. Do not expose cake to temperatures higher than 75 degrees Fahrenheit or to direct sunshine. Some elements on our cakes, such as plastic lay-ons, ribbons, clear bands, cake support posts, and gumpaste flowers, are not edible and must be removed before serving. We package our cakes for safe travel to the best of our abilities. However, we do not assume responsibility for cake mishaps once your cake leaves the shop. Please keep the cake on a level, stable surface, support it well from underneath when carrying, and drive carefully! Refrigerate or freeze any leftover slices of cake in tightly sealed plastic containers. Cakes with fillings, cream cheese frosting, or whipped cream should not be kept at room temperature longer than 5 hours.

17 CAKE FAQs What if I want decorations that aren t offered on your Cake Menu? We do not offer fondant at this time; all cakes are covered in the frosting you choose. We currently stock only the selection of decorations viewable on the example cakes on our Cake Menu. However, we will be happy to create a Custom Designed Cake incorporating any gluten free decorations that you choose to supply. Some design elements, including depictions of characters from film and TV and all logos cannot be rendered in frosting and so must be provided to your cake decorator as an edible image. Please see for a local source of custom edible images. For more details, call today to discuss your Custom Design needs with a pastry chef. Do you offer sugar-free cakes? We currently offer a pre-made 6 round Naturally Sweet Chocolate Tuxedo Cake that is free of cane sugar, sweetened with coconut sugar, applesauce, and agave syrup. Supplies are limited; please call ahead to reserve yours today. Please consult with your physician or dietician to ensure that the ingredients meet your nutritional requirements. Due to the nature of non-granulated-sugar recipes, no larger cakes or specialty decorations are available at this time. What ingredients will be used to make my cake? All of our specialty cakes and cupcakes contain granulated sugar, salt, rice, corn, tapioca, non-hydrogenated palm oil, vanilla, xanthan gum, and added B-vitamins and iron. Some flavors may be special-ordered without corn at an additional charge. Some of our cakes, cupcakes, and optional fillings may also contain eggs, beets, canola oil, butter, milk, cream cheese, lemon juice, cocoa powder, sorghum, olive oil, sunflower lecithin, annatto extract, guar gum, citric acid, apple cider vinegar, apples, pears, cinnamon, nutmeg, allspice, coconut sugar, coconut, agave syrup, almonds, pecans, walnuts, and gelatin. We use artificial colors for decorating purposes and for red velvet cake. Some sprinkles may contain soy. Please ask for a complete list of ingredients before placing your order if you have any doubt about our products compatibility with your food sensitivities. We currently use non-gmo tapioca starch, rice flour, canola oil, baking powder, eggs, and dairy products in our recipes. We cannot verify the non-gmo status of any other ingredients currently used, as the manufacturers are not required by law to disclose this information to us. In order to keep our prices as low as possible, we do not source our ingredients from Certified Organic suppliers.
