6 Fresh Cranberry Scones 3 cups all-purpose flour 1 tablespoon baking powder 1/2 teaspoon salt 1/3 cup granulated sugar 1 tablespoon orange zest 1/2 cup unsalted cold butter cut into small pieces 3/4 cup half and half 2 large eggs 1/2 teaspoon vanilla extract 1 cup fresh or frozen cranberries Topping 2 tablespoons half and half Turbinado sugar 1. Preheat oven to 425 degrees F. Line a large baking sheet with parchment paper, set aside. 2. Whisk the flour, baking powder, and salt together in a large bowl. In a small bowl, rub the sugar and orange zest together with your fingers. Whisk into the flour mixture. 3. Add cold butter to the flour mixture. Cut in butter using a pastry blender or fork. Mix until you have pea size chunks of butter. 4. In a small glass measuring cup, whisk the half and half, eggs and vanilla extract together. Pour over dry ingredients and mix with a spatula until moist. Gently stir in the fresh cranberries. Transfer dough to a floured countertop and knead until dough comes together. 5. Shape dough into a large circle. Use floured rolling pin roll out scone dough. Cut dough into wedges and place on the prepared baking sheet. Brush each scone with half and half and sprinkle generously with turbinado sugar. Bake for minutes, or until scones are golden brown. Remove from oven and cool on wire rack 6
7 WHITE CHOCOLATE PEPPERMINT COOKIES WITH VANILLA SALT Ingredients: 1 2 cup / 115 g unsalted butter, at room temperature 2 tablespoons granulated sugar 2 tablespoons turbinado sugar 3 4 cup plus 2 tablespoons 170 g packed dark brown sugar 1 egg, at room temperature 1 teaspoon vanilla extract 13 4 cups / 250 g all-purpose flour 3 4 teaspoon baking soda 1 2 teaspoon kosher salt 1 cup / 140 g white chocolate chips 2 tablespoons /30 g crushed peppermint candies (or candy canes) Vanilla salt (such as Jacobsen), for finishing Directions: In a medium bowl, cream the butter and sugars together with an electric mixer on medium speed, until light in color and texture, 5 minutes. Add the egg and vanilla and mix well to combine. Again, stop the machine and scrape down the bowl with a spatula. In a medium bowl, whisk the flour, baking soda, and salt to combine. With the mixer on low, slowly add the flour mixture. Mix until streaks of flour still run throughout. Add the chocolate and peppermint candies then mix until everything just comes together. Finish the dough by hand, taking care to scrape the sides and the bottom of the bowl to make sure everything is evenly distributed. At this point, it is best to refrigerate the dough for 24 hours. Resting the dough intensifies the deep toffee flavors, and the texture of the baked cookie improves. When ready to bake, preheat the oven to 360 F. Line two baking sheets with parchment paper. Scoop the dough onto the baking sheets. Top the cookies with a pinch of vanilla salt just before baking. Bake for 10 to 12 minutes. Rotate the sheets halfway through if they appear to be baking unevenly. The cookies should be lightly golden on the outside but still look quite gooey on the inside. Let the cookies cool on the baking sheets for at least 5 minutes. 7
8 Join us every Friday for Breakfast on the Go! Management will provide various breakfast snacks and coffee for our residents to enjoy weekly! Stop by the Community Room at 9:00 AM on Fridays to grab a bite to eat to start your day off right! Wii Bowling Create a bowling league with friends or play on your own! All are welcome and encouraged to join in the fun! Every Thursday at 1 PM beginning December Sign up in the office by Thursday, December 21st to let us know you will be attending! Nintendo Wii, specifically the bowling game, offers participants both physical and cognitive stimulation that can be extremely beneficial. Videogames have been associated with improved attention and reaction time, improvements in knowledge acquisition and retention, and significant increases in positive emotions. Video games use skill selection and cumulative levels, paired with visual graphics to increase engagement, attention and concentration. 8
9 The Significance Of The Poinsettia On Christmas Also known as the Christmas Star and Christmas Flower, it's said that poinsettias association with Christmas comes from a Mexican legend. The story goes that a child, with no means for a grander gift, gathered humble weeds from the side of the road to place at the church alter on Christmas Eve. As the congregation witnessed a Christmas miracle, the weeds turned into brilliant red and green flowers. Named after Joel Roberts Poinsett, first United States ambassador to Mexico and the amateur botanist who introduced the plant to the U.S. in 1825, the poinsettia is also known as Mexican Flame Leaf, Winter Rose, Noche Buena and, in Turkey, Atakurk's Flower, because it was the favorite flower of Atakurk, the founder of modern Turkey. While considered by the ancient Aztecs to be symbols of purity, in today's language of flowers, red, white or pink poinsettias, the flowers, symbolize good cheer and success and are said to bring wishes of mirth and celebration. 9
