Introduction to Fondant All the little figurines in this book are created with converted Fondant icing also known as sugar paste. Fondant icing is a type of icing that has a dough- like consistency. The primary purpose of fondant is to cover cakes and boards and also for cutouts to decorate cakes and cupcakes. There are different suppliers out there, but all the fondant is very soft and pliable, not strong enough to be used for modeling. To be able to use the fondant for modeling, it needs to be converted into a modeling paste by adding CMC (Tylose) or Gum Tragacanth to it (natural thickening agent). The quantity required will vary, according to the humidity and the temperature of the room. Start with roughly one tsp. (5ml) of CMC to 250g of fondant, knead well, and wrap it nicely in plastic wrap. Let it sit for about 20 minutes to firm up. If the fondant is too dry or still too soft; adjust the amount of CMC. Another way to convert fondant into a modeling paste is to mix it with Gum Paste (Flower Paste) 50 percent fondant and 50 percent Gum Paste. When exposed to the air the fondant will dry; it should be covered in plastic wrap at all times. If you find that the fondant is a bit dry, when you working with it; use a small amount of vegetable shortening on your hands and knead it into it, to make it soft and pliable again. Keep the working area clean as it does pick up dirt and lint quickly. Always have a small container with vegetable shortening and a dusting pouch to use if the fondant gets sticky. Always dust the working area with the dusting pouch before rolling out the fondant to prevent it from sticking to the surface. Allow your creations to dry over night, the bigger the figurine the longer will take to dry. When first open the package of fondant it will be a little bit hard; knead in a small amount of vegetable shortening to make it pliable. To store your fondant coat with a thin film of vegetable shortening; cover in plastic wrap and keep it in a small zipped plastic bag. You can make your own Fondant

Tinting the Fondant The best way to color the fondant is to use gel colors, as they won t make a difference in the consistency. To incorporate the color the fastest way is to stretch the fondant, twist and fold There is a pre- colored fondant, which is very helpful for rich colors like black, red, blue. To protect your hands from the colors use gloves or vegetable shortening. If the sugar paste gets a little bit sticky, use a small amount of vegetable shortening on your hands.

Tools and Materials Colored Fondant needed to complete all the projects: White - bone, slipper and rocks Light brown 5 puppies Green garden base, grass, leaves, base of the flower and a ball Blue base, a collar, the bowl and the small paws on the rug Yellow - base, flower, slipper, collar and a bowl Red - base, collar and tongues Light Blue base Black - eyes, nose, center of the flower and rocks Dark brown stick and food

Required Tools Modeling Paste (to every 250 g Fondant add 1tsp CMC) Gel colors: Green, Red, Blue, Black, Yellow, and Brown Cutting Mat to work on, and for measuring the modeling paste 9- inch Rolling Pin Small brush Stick Tool Small container with water to attach the parts together Double sided Ball tool Double sided knife and needle tool Double sided quilting tool Toothpicks or piece of dry spaghetti to support the head Small container with shortening Dusting Cup (mix of 50 percent powder sugar and 50 percent cornstarch) Plastic wrap and small plastic bags to keep the fondant covered Gloves for coloring the fondant Big round/scalloped cookie cutter Ruler Food writers Recourse: Tools & Materials used to complete the projects.

Basic Shapes There are five basic shapes and three additional small shapes required for modeling all the characters and the accessories in this book. The fondant measurements are taken using a cutting mat in inches. Always start with rolling a smooth ball of fondant.

Measuring Chart Follow these measurements to complete all the puppies in this book. If pre- measuring all the parts, keep them in a small plastic bag or covered with plastic wrap to prevent them from drying.

Workshop 1 - Base Dust the board with the dusting pouch and set aside. For the base take the desired color of sugar paste, roll it out with the rolling pin using the purple rings (Image 3). Cut a circle with the cookie cutter. Remove and cover the excess with a plastic wrap or put it in a small plastic bag to prevent from drying. Decorate as desired and place it on the pre- dusted board to dry while you are working on the project (Image 5). If the cutter is not available use a ruler and the straightedge wheel of the quilting tool and cut a square shape rug.

Workshop 1 - Base part 2 BASE FOR PROJECT 1 Gently roll the Embosser wheel on the quilting tool over your rug to create diagonal lines (use the ruler to keep them straight). Turn the rug and roll the wheel in the opposite direction to create quilted pattern or diamond shapes (Image 1). With the straightedge wheel make small cuts all the way around the rug (Image 2). Using the small ball tool, make little movements on few places at the edge of the rug for a 3D look (Image 3). BASE FOR PROJECT 2 To make the little paws cut 8 small dots with the piping tip 12 and 32 even smaller dots with piping tip 7 (image 1). Attach them to the rug with a damp brush, to create the paws. If it s hard to pick them up use a corsage pin (image 2). If the piping tips are not available just roll 8 small balls and 32 even smaller balls; press them gently with your finger to flatten.

Workshop 1 - Base - part 3 BASE FOR PROJECT 3 Using the small ball tool, make little movements on few places at the edge of the rug for a 3D look. BASE FOR PROJECT 4 To make the fringe use the needle tool and make small cuts all the way around the rug.

Workshop 1 - Base - part 4 BASE FOR PROJECT 5 For the base of the flower, roll a small ball of green sugar paste and flatten (image 1). Roll 15 small yellow and 2 green balls and shape them to teardrops for petals and leaves. Paint the small green base with a little bit of water and arrange the 7 yellow petals and the 2 green leaves to form the flower (Image 2, 3). To finish it up, attach a small black ball in the center of the flower and leave to dry. To create the grass, roll different size teardrops from the green sugar paste. Attach them to the base with a dab of water in a cluster starting with the longest in the center and the smaller pieces at the end (image 4, 5). Make a little space for the flower in the center of the grass (image 5). For the rocks take a black sugar paste and a little bit more of the white sugar paste. Mix them together but don t over mix, leave it marble. Roll different sizes balls and pinch them gently to shape small rocks (image 6, 7). Move them to the pre- dusted board and let them dry overnight.

Workshop 2 Head STEP 1 THE HEAD Roll the ball for the head into a pear shape (image 1, 2). With the knife tool cut a little opening for the mouth (image 3). Make a line from the mouth up in the center front of the muzzle. Mark the whisker holes with the needle tool (image 4). Make space for the tongue by slightly turning the tool (image 5).

Workshop 2 - Head - Part 2 STEP 2 THE TONGUE For the tongue, roll a small teardrop shape from the red sugar paste (image 1). Press with your finger to flatten (image 2). Mark a line in the center of the tongue with the knife tool (image 3). Apply a little bit of water inside the mouth to attach the tongue (image 4). Pick it up with the needle tool and push it into the mouth.

Workshop 2 - Head - Part 3 STEP 3 THE EYES AND THE NOSE Using the back of a small brush or stick tool mark the eyes (image1). To shape the nose hold the little ball of black sugar paste with your finger. Press with the needle tool to make two indents for the nostrils (image 2). Apply a little bit of water to attach the eyes and the nose (image 3 and 4).

Workshop 2 - Head - Part 4 STEP 4 THE EARS To form the ears roll two small teardrop shapes and flatten them by gently pressing with your finger (image 1). Add a dab of water to the pointed end to attach them to the head (image 2). Place them down (image 3). Tilted to the back (image 4). They may be straight up (image 5, 9). Or gently bend them down (image 6, 7, 8, 10).

Workshop 3 Legs THE LEGS To shape the legs roll the ball to a tapered sausage shape. Hold it with your finger and gently push the back of the thicker part to form the paw (image 1, 2). The back legs are slightly bigger than the front legs (image 3). To shape the back legs pinch the top half of the legs to flatten (image 4 and 5). Mark the toes with the knife tool (image 6).

Workshop 4 Tail THE TAIL For the tail make a little indent with the back of small brush or a stick tool (image 1). Apply water with the brush (image 2). Roll a ball of the same color as the body into a small rope to form the tail (image 3) and attach to the body.
