2 Dear Foodie Welcome to Fairmont The Palm, the new food hotspot on the Palm. With several new outlets recently opened, we invite you to dine with us and experience a rendezvous of the senses and a celebration of the finest flavours. With a choice of 10 world-class restaurants and lounges that take diners on a culinary journey from Arabia to Europe and South America; providing endless options for intimate dinners à deux or family fun around the table. To name but a few, these include Little Miss India, a vibrant and eccentric restaurant, lounge and bar that invites guests to explore the incredible quality, history and diversity of Indian food, or our latest addition to our food offering, Blowfish, a casual style American dining destination serving grab and go dishes such as burgers, loaded hot dogs and crazy, colourful milkshakes. One of my main responsibilities is working with the resorts talented teams towards maintaining a high position as a culinary destination on Palm Jumeirah and ensuring we are trend-setters in the Dubai dining scene. Named after fictional character Mohini Singh, the daughter of a family of spice traders, Little Miss India will whisk you away on a fascinating journey of Indian flavours. Expect the freshest of ingredients, a tantalising array of spices, marinades and pickles, all prepared using traditional techniques. The décor is as vibrant as the cuisine and reflects Little Miss India s travels. Look out for the Tribal Art Taxi as you enter the restaurant. It s as unforgettable as the experience that awaits.

Playing home to a Michelin star trained chef, Romain Van Durmen; the popular studio combines wonderful cuisine with unique culinary classes. Avid foodies can enjoy master classes, chef s table experiences and even a Friday brunch. Chef Romain has developed a weekly schedule of different master, afternoon and VIP cooking classes. Master Chef Class Studio Whatever you cook Cooking Events: Available on request Open Class: Every Wednesday 12:00pm Every Friday 8:00pm Ingredients: 350g dark chocolate 8 eggs, whites and yolks separated 100g and 200g sugar 125g whipping cream Method: 1: Gently melt the chocolate with the cream in a bowl over a pot of simmering water then let cool to room temperature. 2: In a medium sized bowl whisk the yolks with 200g of sugar over the simmering water to cook, whisking the entire time until warm and foamy then allow the mixture to cool to room temperature. 3: Beat the egg whites with an electric mixer on medium speed until soft peaks form. 4: With the mixer still running slowly add the remaining 100g of sugar and continue to whip until stiff peaks are formed in the egg whites. (Adding the sugar too quickly will cause the whites to collapse). 5: Fold 2/3 of the whipped egg whites to the chocolate mixture and fold the other 1/3 to the yolk mixture. 6: To finish, gently combine the two mixtures together and portion into individual serving glasses and allow to chill in the refrigerator for at least 4 hours.
