4 Food catering guidelines for diverse populations Purpose The purpose of this document is to facilitate food catering for diverse populations. While International Student Services (ISS) regularly caters for events for primarily international students, we are aware that the La Trobe University staff and overall student population are similarly diverse. It addresses food catering that is culturally sensitive to the specific needs of people who are: Muslim Jewish Hindu Vegetarian Vegan Coeliac (on a gluten-free diet) This Guide has been developed by the ISS team to assist La Trobe University staff to cater for events where there is a diverse population. Note that these are guidelines; it s best to ask those who are attending about their particular dietary needs. Some caterers who are aware of these dietary needs and whose services have been used by ISS are listed at the end of this document. 2
5 Guidelines MUSLIM DIETARY REQUIREMENTS (I.E. HALAL FOOD) Requirements Absolutely no pork or pork products: for instance no ham or food fried or cooked in pork oils and fat All meat, whether chicken, beef, lamb or any other meat must be halal i.e. the animal is slaughtered in a prescribed way when being prepared for consumption Recommended options Seafood is a good option Vegetable oils, vegetable fats or olive oil are a good option Cooking oils and fats must also be halal No alcohol, so avoid things like cooking in red wine JEWISH DIETARY REQUIREMENTS (I.E. KOSHER FOOD) Requirements Absolutely no pork or pork products: for instance no ham or food fried or cooked in pork oils and fat All food must be kosher i.e. the animal is slaughtered in a prescribed way when being prepared for consumption Recommended options Vegan options are kosher Vegetable oils, vegetable fats or olive oil are a good option Sea food without scales is forbidden Cooking oils and fats must also be kosher La Trobe University 3
6 Food catering guidelines for diverse populations HINDU DIETARY REQUIREMENTS Requirements Hindus do not eat beef as the cow is considered a sacred animal Some Hindus are also vegetarians. This includes Jains, who are generally strict vegetarians Recommended options Serve a lamb or chicken. By ensuring the lamb or chicken is halal Muslims will be catered for too A seafood option Fresh garden salads with no cheese Vegetable based salad oils only and perhaps vinaigrettes VEGETARIAN DIETARY REQUIREMENTS Requirements No meat or fish Sometimes no egg either Recommended options Tofu and soy products Burgers made out of lentils or legumes, or falafels cooked in vegetable or olive oils Vegetarian sushi Salads with olive oil Cheese Mixed nuts with dried fruit VEGAN DIETARY REQUIREMENTS (I.E. NO ANIMAL PRODUCTS) Requirements No meat or fish No eggs No dairy products No products from animals therefore no honey Recommended options Tofu Soy products Fresh garden salad olive oils or vegetable oil is ok Burgers made out of lentils or legumes or falafels cooked in vegetable or olive oils Mixed nuts with dried fruit 4
7 COELIAC DIETARY REQUIREMENTS (I.E. GLUTEN-FREE DIET) Requirements People with coeliac disease require a glutenfree diet. What is gluten? Gluten is a composite formed from several different proteins. It is found most commonly in wheat and other related grains, such as barley and rye. What to say and do when ordering with a caterer? Clearly state what kind of dietary requirements need to be catered for. You may want to ask people to specify any particular dietary requirements they have when they RSVP to an invitation. Stipulate for instance, that students are from the Muslim, Hindu or Jewish faith, can be vegan or have gluten-free needs If necessary, give the caterer a copy of these guidelines which list the possible food options All attendees should have some possible protein they can eat as part of their meal. For example vegetarians should not only be served salad or vegetables Food must be clearly labelled on the servery table. For instance halal lamb or halal chicken. Vegetarian/Vegan food must be clearly labelled for instance as no egg or no mayonnaise or gluten free Different types of food must be on separate serving platters. For instance meat on one platter and vegetarian on another platter and seafood on another platter. All food platters and trays must be clearly labelled on the catering table Food serving tongs or serving spoons for each dish must be provided Meat must be cooked on a separate hotplate and vegetarian burgers and vegetarian sausages on another hotplate. This means that the caterer may require several separate BBQs. The meat and vegetarian food must be placed in separate serving trays or hot food containers 8
11 All cooking staff must wear food handling gloves and aprons and have long hair neatly tied back. Staff/Volunteers who do casual cooking and serving would need to be briefed on this and provided with disposable food handling gloves and aprons and be asked to tie long hair back neatly. They also need to know the above about separate BBQs and only using designated tongs and serving utensils. Checklist for ISS when catering BOOKING DATE AND DAY: Does it conflict with any religious festival? Refer to Cultural Diversity Calendar produced by Equity and Diversity, LTU Not on a Friday afternoon - between 12 noon and 2 pm as it is prayer time for Muslim students. Consider placing an apology if the event has to be on this day and time Ask students to stipulate their dietary needs when sending out invitation Are there any other major University events on that day? Refer to University Academic Calendar or the University Events Calendar Is a member of Senior Management required to attend? Contact the OVC before locking in a date Are there any other key ISS events/programs on that day or before/after that day which might impact on the event? E: studentsupport@latrobe.edu.au to ask Are key ISS Team members who must attend available? E: studentsupport@latrobe.edu.au to ask Are any VIPs or Senior Managers attending? Ask University Events E: universityevents@latrobe.edu.au CATERER: Have we used this caterer before? If no, discuss in detail the food requirements as outlined in Guidelines above Muslim, Jewish, Hindu, Vegetarian, Vegan, Gluten-free, Allergies. Send the caterer a copy of these Guidelines if necessary If yes, remind the caterer about the food requirements as outlined in these Guidelines Get a detailed menu La Trobe University 9
12 Food catering guidelines for diverse populations Outline in detail what the cost per head includes. Does the cost include: Crockery what type? Plastic disposables or porcelain Cutlery what type? Plastic disposables or stainless steel Jugs of water Serviettes must provide Drinks No alcohol. Plastic disposable cups or glasses Provide jugs for the drinks Delivery of the food Set up of the food tables and clearing away Table cloths for the food tables including guest tables Clearing away get a phone number to ring at the end of the event so that the caterer can be contacted to clear away. If we are clearing up ensure that there are bins provided Discuss how payment needs to be made. Credit Card or Cost Codes? 10
