3 And cold beer. And getting control of the remote because there is only so much talking about football a girl can handle (I m looking at you ESPN). Happy fall, friends! Football is here. Yellow school buses are back on the roads. It s that awkward time of year where it still feels like summer, but I feel strange in a dress and sandals. The leaves are turning colors and the temperatures are still in the 80s. Basically, it s September in North Carolina and it s lovely.

6 Nothing goes better with fall and football (or basically any gathering of more than one person) than spinach artichoke dip. Filled with melty cheese, tangy artichokes, healthy spinach, and lots of garlic, this is a classic for a reason! I make mine with greek yogurt instead of the traditional sour cream so we can ignore all that cheese and feel good about our decision to eat yogurt and vegetables to counteract the cold beer, chips, wings, and whatever other football food goodness we ve got going on. Before we dip in (oh yes), there are two keys to spinach artichoke dip success that we need to discuss: 1 Drain the spinach. Thaw your spinach out then wrap it in a paper towel and squeeze as much water out as you can. Don t skip this step because any extra liquid from the spinach will make your dip watery. 2 Lots of garlic. On top of the ranch dip mix, which is traditionally in spinach artichoke dip, I also add a tablespoon of garlic powder AND minced garlic. Greek yogurt, spinach, and artichokes are just not bringing that much flavor to the table, so we need a good amount of garlic along with the ranch dip mix to give our dip its delicious flavor.

This recipe uses greek yogurt to lighten things up just a bit. Ingredients 1½ cup greek yogurt 1 oz packet ranch dip mix 1 tablespoon garlic powder ¼ tsp salt 2 garlic cloves, minced 10 oz chopped spinach, defrosted and drained 14 oz can artichoke hearts, roughly chopped 2 cups shredded mozzarella cheese, divided ½ cup shredded parmesan cheese Instructions 1. Preheat oven to 350 and spray baking dish generously with cooking spray (you can use 11x7
10 or 9x9 or anything similar that you have on hand). 2. In a medium bowl, combine greek yogurt, ranch mix, garlic powder, salt, and minced garlic. Stir well, you want all of the flavor well combined with the greek yogurt. 3. Add the chopped spinach, chopped artichokes, and 1½ cups mozzarella cheese to greek yogurt mixture and stir to combine. 4. Pour mixture in greased baking dish and top with remaining mozzarella cheese and parmesan cheese. 5. Cover with foil and bake at 350 for 30 minutes. Then remove foil and bake an extra minutes until the cheese is melted and starts to brown. If you want your cheese to brown a bit more you can turn your broiler on. Be sure to keep a close eye on it because it will brown quickly. 6. Let cool about 15 minutes before digging in. Serve with tortilla chips, chopped veggies, pita chips, or any other dipper you can dream up. 7. Enjoy! Psst.
