5 French onion soup 50g butter 2 tbsp olive oil 800g brown onions, thinly sliced Pinch sugar ¾ cup white wine 1.5L good-quality beef or chicken stock, hot Bouquet garni (see tip) Salt and cracked black pepper ½ sourdough loaf, cut into 1cm slices Olive oil cooking spray 1 clove garlic, peeled, halved 200g grated gruyère or good-quality cheddar Thyme sprigs, to garnish 1. Heat butter and oil in a stockpot over a medium heat. Add onions and cook, stirring, for 5 minutes or until beginning to soften. Cover with lid, reduce heat to low and cook, stirring often, for 20 minutes or until soft. Remove lid, stir in sugar and cook for a further 15 minutes or until onions reach a rich, caramelised consistency without burning. 2. Add wine, hot stock and bouquet garni. Simmer, covered, for 20 minutes to blend flavours. Season to taste. Discard bouquet garni. 3. Meanwhile, preheat grill to high. Place sourdough on grill tray, spray top side with olive oil and rub with cut side of garlic. Grill until golden. Top with cheese and grill until melted. 4. Ladle soup into serving bowls and top each with a cheese toastie. Sprinkle with thyme. Serve with extra toasties. Tip: A bouquet garni is a small bunch of fresh herbs tied together for use in soups, stews and casseroles that can be easily removed and discarded. We used two bay leaves, parsley stalks and thyme. Stockists, page 262 roasted brussels sprouts with chestnuts & pancetta Roasted Brussels sprouts with chestnuts & pancetta 500g chestnuts, optional (see tip) 700g brussels sprouts 250g diced pancetta or bacon (see tip) 2 tbsp olive oil Pomegranate vinegar or balsamic vinegar, to serve 1. Preheat oven to 200 C. Using a serrated knife, cut across the flat side of each chestnut until you reach flesh. Place in a roasting dish and roast for minutes or until skin opens, exposing chestnut. Tip chestnuts into a clean tea towel and wrap up to steam for 15 minutes or until just cool enough to peel outer and inner skins (chestnuts are difficult to peel if cold). 2. Cut chestnuts in half. Set aside. Trim bases of sprouts and cut in half lengthways. Discard coarse outer leaves. Place in a roasting pan with chestnuts. Sprinkle with pancetta. 3. Drizzle with oil and toss to coat. Roast for minutes or until golden. Transfer to a serving platter and drizzle with vinegar. Serve. Tip: When Australian chestnuts are out of season, find blanched and frozen chestnuts at Thomas Dux stores. Or, you can buy cooked, peeled and vacuum-sealed chestnuts online from cheznuts.com.au. Tip: Find diced or whole pieces of pancetta in the charcuterie sections of gourmet greengrocers or supermarkets. Alternatively, use diced speck. >

6 Beef shin stew with polenta dumplings 1 3 cup plain flour Salt and cracked black pepper 2kg beef osso buco ½ cup olive oil 1 large onion, chopped 2 large carrots, chopped 1 swede (250g), peeled, finely chopped 3 cloves garlic, crushed 250g button mushrooms 2 cups beef stock 1 cup red wine ¼ cup tomato paste 4 bay leaves 2 sprigs of rosemary Polenta dumplings ¾ cup self-raising flour ½ cup polenta ½ cup finely grated cheddar 20g butter, finely chopped ½ tsp salt ½ cup milk, hot Beef shin stew with polenta dumplings 1. Place flour in a bowl and season. Toss osso buco in flour and shake off excess. Heat 2 tablespoons of the oil in a large frying pan over a mediumhigh heat. Cook meat in two batches, adding another 2 tablespoons of the oil, until brown on both sides. Remove meat and set aside. 2. Meanwhile, heat remaining 2 tablespoons of the oil in a large, heavy-based stockpot over a medium heat. Add onion, carrot, swede and garlic to pot and cook, stirring, for about 8 minutes or until soft but not brown. Add mushrooms and cook, stirring, for 2 minutes. 3. Deglaze frying pan the meat was cooked in with stock, stirring to remove any scraps of meat from base of pan. Bring to a simmer and add to stockpot. Add wine and tomato paste to pot and stir to combine. Add bay leaves, rosemary and browned meat to pot. Season. 4. Stir until coated with sauce (some meat will sit above sauce, but this will break down later). Cover with lid and simmer over a low heat for 1 hour 50 minutes, stirring occasionally, or until meat is falling off the bone. Remove lid and discard bones and any long, fatty sinew. 5. To make dumplings; combine flour, polenta, cheese, butter, salt and milk in a bowl until a sticky dough forms. Roll tablespoons into balls. Drop into stew. Cover and gently simmer over a medium-low heat for a further minutes, or until dumplings have doubled in size. Serve. Pear & cinnamon cobbler with rhubarb 1kg firm pears, peeled, cut into wedges, core removed Juice of 1 lemon 1 tsp cinnamon ¾ cup sugar 1 bunch rhubarb, rinsed, leaves discarded, ends trimmed ½ cup water Ice-cream, to serve Icing sugar, for dusting Cobbler 1½ cups plain flour 1 tsp baking powder 1 3 cup sugar 140g unsalted butter, chopped, room temperature 1 egg, beaten ½ cup milk 1. Preheat oven to 200 C. Combine pears, lemon juice, cinnamon and a quarter of a cup of the sugar in a bowl and toss to combine. Spread in a roasting dish and bake for 20 minutes. 2. Meanwhile, cut rhubarb into finger-length pieces. Spread in a separate roasting dish. Sprinkle with remaining sugar and the water. Set aside. 3. To make cobbler; combine flour, baking powder and sugar in a bowl. Add 100g butter and rub it in with fingertips until mixture resembles coarse breadcrumbs. Using a blunt knife, cut egg and milk into mixture until it forms a soft dough. 4. Spoon pear mixture with juices from baking dish into a 8 10 cup capacity ovenproof dish or skillet. Dot with remaining butter. Crumble large pieces of cobbler over the top. Place both cobbler and rhubarb dishes in oven and bake for minutes or until cobbler is golden. 5. Pour syrup from rhubarb dish into a jug and reserve. Spoon cobbler into serving bowls with scoops of ice-cream and dust with icing sugar. Top with rhubarb, drizzle with syrup and serve immediately.
