8 SUSHI? SASHIMI? Sashimi Fish Sushi Nigiri Fish + Rice A slice of raw fish or seafood. A slice of raw or cooked fish pressed onto a mound of vinegared rice. *Please ask your server if you like wasabi in your nigiri.* Roll Maki Fish + Rice + Seaweed Hand Roll Temaki Fish + Rice + Seaweed Layers of raw or cooked fish, vegetables and vinegared rice on a sheet of dried seaweed rolled into a cylinder then cut into pieces. A cone-shaped piece of nori on the outside and the ingredients inside. The following illustrations are intended only as an explanation. FUN FACTS Sashimi knives are sharpened differently. Unlike most knives, most Japanese knives are sharpened on one edge only with a traditional whetstone. They cut on the pull stroke rather than the push stroke, allowing chefs to keep their elbows close to their side. Ginger is meant to cleanse your palate. The pickled ginger that usually comes with your sushi isn t meant to be topped on your sushi, but rather consumed in between bites of fish to cleanse the palate. Sushi rice should not be dipped in soy sauce because sushi rice is already flavored. The rice is like a sponge, and too much soy sauce will overpower the taste of the food. Just dip little bit on the fish side for balanced flavors. But there s nothing wrong with experimenting with flavors. We like you to have fun and enjoy our food. The key to eating with chopsticks is simply to move only the top chopstick. The bottom stick is held stationary in your fingers while the top stick controlled by your first two fingers and thumb is moved to pinch bites of food. Hold the top stick much in the same way you would hold a pen or pencil.
