1 Skillet Macho-Nacho Platter + Super Fast-Easy Cheesy Sauce + Frozen Mar(kid)ritas macho nachos cut+drizzle Pre-heat your oven to 375 degrees. Give kids 6 corn tortillas and have them cut into triangles, like a pizza. Place them on your cookie sheet and drizzle with 2 tbs of Vegetable oil. Try and separate all the chips so that they re all in one even layer. Salt the chips directly on the cookie sheet. Bake for about 8 min or until the chips are lightly browned and crisped. wash+chop+grate While the chips are have your kids wash and chop up 1 Roma tomato, 2 stalks of green onion, 5-10 whole Black Olives, 1/4 cup bell pepper and Handful of fresh cilantro The smaller the better! Ask your kids grate 1/2-3/4 cup Monterey Jack cheese. Set the grated cheese and chopped vegetables and herbs to the side dice+drizzle Have the kids dice up 1 avocado and toss with salt and 1 teaspoon fresh lime juice (add a little drizzle of oil too!) measure+sprinkle After your chips are crisp. Remove the cookie sheet with the chips from the oven but keep your oven on. Then have your kids measure out 1/2 cup canned black beans (rinsed well), 1/3 cup corn kernels and sprinkle on top of your chips. Then sprinkle the chopped up the Roma tomatoes, the green onions, the black olives, the bell pepper on the chips. Sprinkle on the grated cheese and stick back into the oven for 5 minutes or until the cheese is melted and bubbly Cooking

2 serve+shout After the cheese is melted, serve nachos with the avocado mixture and the chopped cilantro. Add additional toppings that might include: extra fresh lime, extra cheese, extra cilantro, extra chopped tomatoes, sour cream and of course the super fast-easy cheesy sauce then SHOUT: Comer bien mis amigos! Eat well my friends! super fast-easy cheesy sauce grate+toss Have your kids grate 4 ounces Monterey Jack cheese add to a large bowl with ½ tablespoon corn starch. Toss to combine. heat+stir Transfer the cheese to your skillet over medium-low heat. Add ½ cup evaporated milk and pinch of salt, pinch of onion powder, pinch of paprika and pinch of black pepper. Cook over med-low heat, stirring constantly with a wooden spoon until melted, bubbly, and thickened (about 3-5minutes). Mixture will look thin and grainy at first but will thicken and come together after heating. thin+adjust+enjoy Thin to desired consistency with additional evaporated milk Taste and adjust flavors and pour over nachos! whole fruit marg-kid-ritas peel This recipe is SO healthy since it is made with whole fruits. You get all vitamin and fiber benefits and it tastes GREAT! Have kids peel ALL of the fruits (1 orange peeled, 1 lime peeled, 1 lemon peeled). measure+blend Add all the peeled fruit into your blender with 1 cup of water, 1/4 cup of sugar or honey (or 4-5 packs or stevia), 3 cups of ice. Have kids put the lid on your blender, Blend on high and count in Spanish. Add a BIG pinch of salt and blend more until you get the texture you desire. Pour into a glass and ENJOY! 2015 Cooking

5 fun food facts: The surprise ingredient of the week is: Corn! Corn is one of the most common foods in Mexico. It is used to make tortillas which are eaten daily by most people. Tortillas are usually a substitute for bread. Other common foods are tacos, tamales, stew and beans. Scientifically speaking, any plant is considered a vegetable. But if we were to put corn in the food pyramid, we would place it in the grain food category. Corn is a tall plant grass that has large ears with many seeds or kernels. These seeds grow in rows on the larger ears and are eaten as a vegetable. Corn is grown as food for both people and animals. Corn, also called maize, is a cereal grass related to wheat, rice, oats Choose ears of corn with yellow or white niblets and inspect each ear of corn before buying. Avoid any corn that has dark spots. Store corn in the fridge until ready to use. Corn is high in Vitamin B, Fiber, Vitamin C and thiamin Corn is dependent on man s cultivation for our existence. Most scientists agree that it would take only three generations of neglect for corn to become extinct. (You won t let that happen to us will you?) Sweet corn has been bred to have higher levels of natural sugars - one of the reasons it s so popular. As corn ages, the cobs develop more starches and sweet corn is one of the few vegetables that is a good source of the kind of slowly digested carbohydrate that gives you long-lasting energy. Corn is an excellent source of dietary fiber. Corn also contains vitamin C and niacin (one of the B group vitamins) and folate (one of the B group vitamins). Corn is a good source of potassium to help balance the body s fluids if you eat salty foods. A bushel of corn can sweeten 400 cans of soft drink. In the days of the early settlers to North America corn was so valuable that it was used as money and traded for other products such as meat and furs Cooking

7 fun food facts: What are Nachos? While nachos are often served at Mexican-American restaurants, they're not a typical Mexican dish. And even though nachos were invented in Mexico, they were created for an American palate. During World War II, wives of American military officers who lived at the Eagle Pass, Texas base would often venture over the Rio Grande River to the nearby Mexican town of Piedras Negras. On one of these excursions, a group of women stopped at the Victory Club, a popular restaurant, for a bite to eat. And while happy to receive business, the maitre d' who greeted the women, Ignacio Anaya, found himself in a bit of a predicament: He couldn t locate the cook! Not wanting to turn away the patrons, he put on his chef s hat. He looked around the kitchen and threw together what he had: tortilla chips, cheese, and jalapeño peppers. And so the nacho was born, with a missing chef to thank for it. Ignacio was often called Nacho for short, and the dish was named after him. Nachos continued to gain popularity for the next 20 years, but really took off thanks to a man by the name of Frank Liberto, who began to sell them as stadium food at Arlington Stadium (home of baseball s Texas Rangers at the time). Liberto made one major tweak to Anaya's nachos:...because real cheese didn t have a great shelf life (and melting it would require an oven or broiler), Liberto devised a fast food form of Anaya s masterpiece that was part cheese and part secret ingredients. The new sauce didn t need to be heated and, when it came to shelf life, it could likely survive a nuclear blast. Our Cooking nacho cheese sauce is MUCH healthier than Liberto s! JOKES: Knock, knock!
