3 Dairy Dairy Moroccan Lamb Serves: 6-8 Prep time: 20 minutes Cook time: 4 hours + 30 minutes resting time Ingredients 2.5kg boned grass fed lamb shoulder 4 Tbsp olive oil 3 Tbsp Ras al Hanout spice blend 2 garlic cloves, minced 500mL (2 cups) chicken stock 12 medjool dates 500g Farmers Union Greek Style Yogurt 1 pomegranate, seeds only ½ (half) cup pistachios, roughly chopped handful fresh mint leaves handful fresh coriander leaves Cous cous to serve Method STEP 1 Remove lamb from refrigerator and allow to come to room temperature for 30 minutes. Heat 2 tablespoons oil in a wide frypan and seal lamb on all sides. Remove and set aside. STEP 2 Mix spices with garlic and remaining oil to make a paste. Rub all over lamb and place in large roasting pan. Add stock and dates, cover with foil and place in preheated 150 C oven for 3 ½ hours. Remove foil and continue to cook for a further 30 minutes. Add extra liquid if necessary. D ) C STEP 3 Remove lamb from oven and rest for 30 minutes, lightly covered. Carve and place on serving platter. Drizzle with yogurt and garnish with pomegranates seeds, pistachios and fresh herbs. Serve with cous cous C C C C C C 22711

5 BakerY+ Breads BakerY + Breads D F ) Raita Tandoori Chicken Skewers with Raita INGREDIENTS: (Serves 4) cup tandoori paste 1 tablespoon lime juice cup plain yoghurt 12 wooden skewers, pre-soaked 2 tablespoons olive oil 4 Mission Naan breads, to serve 175ml plain yoghurt ½ teaspoon cumin seeds, lightly roasted in a dry pan ¼ bunch fresh coriander leaves, chopped INSTRUCTIONS 1. Combine tandoori paste, lime juice and yoghurt in a bowl. Thread chicken pieces onto skewers. Place on large ceramic tray and spoon over tandoori mixture. Cover and refrigerate for at least 3 hours. 2. To make the raita, combine the yoghurt, cucumber and cumin and season with salt to taste. Mix well with the chopped coriander leaves. Cover and refrigerate. 3. Heat BBQ, add the olive oil. Cook chicken skewers, turning and basting with marinade, for 8 minutes or until cooked through. 6 Frozen Foods Frozen Foods F 8720 ) F ) F 3018 ) 9 65 F ) F ) F F ) F 3263 ) F F F F 2051 F F F 1474 F Rare Beef, Beetroot, Goats Cheese & Walnut Salad Ingredients: McCain Sweet Potato Wedges Product Code Beef Scotch Fillet Chopped Walnuts, Toasted Olive Oil Goat s Cheese, Crumbled Baby Beetroot, Trimmed White Balsamic Vinegar Mixed Baby Salad Leaves Method: Preheat oven to 180 C/160 C fan-forced. Place beef in a roasting pan. Drizzle with 2 teaspoons oil and rub to coat. Wash beetroot & pat dry. Arrange beetroot around beef. Drizzle with 2 teaspoons oil. Season beef and beetroot with salt and pepper. Roast for 35 to 45 minutes. Allow to cool completely. Peel and halve each beetroot. Deep fry McCain Sweet Potato Wedge Ridge Cut at 175 C for 2 ½ minutes. Shake to remove excess oil. When using smaller amounts reduce cooking time. Thinly slice beef. Arrange the salad leaves on a platter. Top with beef, beetroot, walnuts and goat s cheese. Drizzle with vinegar and remaining oil. Serve with the McCain Sweet Potato Wedge Ridge Cut. Season with salt and pepper.
