1 Last winter, I conducted a study and started marketing Microgreens from an apartment space on the East Side of Buffalo. This year, after moving out to East Aurora, I ll be setting up a portion of my living space to custom grow them for folks. I originally selected some of the more popular crops and continue to experiment with specific media, nutrient sources, light requirements, harvesting, and storage factors to analyze and keep notes there really isn t any need to use any added synthetic materials or plant protection chemicals in the process, so I avoid their use. The crops listed in this document are presently in the 'mix', though at varying levels of availability due to the timing of planting, care, and ideal harvest stage. Ultimately, crops will be custom grown with a typical turnaround of 10 days from planting to harvest, with some crops requiring more time. There s no way I can grow ALL of them in my space, but they do represent the ones I would recommend considering. The goal is to have same day fresh. The space I m using this year is limited because I m also conducting a project using a new stacking planter product I m pretty excited about in both an open room arrangement, but also using a grow tent. I d like to have a few customers/members engaged that I can custom grow their baby salad and microgreen crops so that you can pick them up (or I can arrange for delivery) on a regular basis out at my place. Our Base Pricing will be based on a small (usually oz by weight) clamshell container (left) pre-cut; or as a 'flat' (10"X20") of a live crop you can cut, wash, and use fresh as you need. Left: Clamshell (good for mixing different crops or to 'try out') Right: 10"X20" Flat (best for continuous use over the course of several days and we will instruct you on maintaining freshness if you wish). We can custom grow 2-3 crops in the same tray for you if they are similar in growth habit and days to harvest. So have a look at the following pages of examples I can grow for you, and reach out right away to get more information. 2 Here are some examples of the crops I d like to grow for you and a little information about each: Broccoli Broccoli Microgreens have a delicious mild, fresh cabbage flavor and makes a great addition to any microgreens salad or garnish. Deep Green in color, it's best uses include Garnishes and on sandwiches; Cooking; and Seasoning; also as a baby salad green. You can't go wrong with this base microgreen on any salad or plate. (Media: Hydroponic - not recommended for Baby Salads) Pak Choi Cabbage Pak Choi is a pale green microgreen with a slightly sweet, robust flavor, uniquely mild, it goes well in any micro salad, and can be grown to the baby salad stage.broccoli Microgreens have a delicious mild, fresh cabbage flavor and makes a great addition to any microgreens salad or garnish. Deep Green in color, it's best uses include Garnishes and on sandwiches; Cooking; and Seasoning; also as a baby salad green. Red Acre Cabbage Red Acre Cabbage is a flavorful microgreen that makes a great base for any microgreens salad. The interesting color combinations make them great garnishes or additions to any sandwich or slaw. Detroit Dark Red Beet Beets make for a very colorful microgreen. We harvest close to the soil to feature the colorful red stem. A fantastic garnish or accent to any dish for it's beauty.
3 Cilantro Cilantro microgreens have flavor more intense than adult cilantro they're somewhat tricky to grow and take a bit longer than other micros, but there's no comparison between fresh Cilantro and grocery or stored product. Great for salsa, indian recipes or any recipe that calls for cilantro. Pea Dun An all time favorite with slightly sweet, substantial crunchy shoots. The pea shoots are sweet and delicious and fairly straight and leafy. They make a great garnish or addition to any salad. Sunflower Sunflowers are another all-time favorite microgreen! The greens are large, substantial and have an amazing nutty flavor. We recommend this as a staple of any microgreens salad! They make an excellent snack too! The seed is a little pricey on a per flat basis, but it's a bulky plant and fills the tray nicely. Arugula Arugula is a very popular microgreen..it's generally considered a staple of the spicier side of micro greens and baby salad greens. The peppery taste gets less intense as it gets bigger..
4 Genovese Basil Genovese basil is a variety of sweet basil. It has a beautiful green color with an interesting shape that makes for a colorful garnish. Micro basil does not grow tall. Micro basil are among the more expensive crops to grow but are worth it for their intense basil flavor. It's an outstanding choice for caprese, pesto or any recipe that calls for fresh basil. Chard (Swiss Rainbow Mixture) This chard variety has a mild delicate spinach flavor and amazing assortment of colors. It makes an excellent choice to add to any micro mix for the flavor and color. The seeds can be a bit pricey and they're tricky to grow, but well worth it! Blue Curled Kale Blue Curled Kale is a robust and substantial microgreen but carries a wonderful mild spinach flavor which makes a great micro or baby salad green. Red Russian Kale Similar to Blue Kale in character and flavor, but with a hint of red in the upper stem for color.
5 Mizuna Mustard This Japanese mustard green has a fresh, very mild peppery mustard flavor and adds an interesting zest to any micro salad or sandwich. Mizuna Red Streaks Mustard This red streaks variety tastes just like regular Mizuna, but has beautiful red-purple highlights on the green leaves. It's a very popular choice of Mustard. Osaka Purple Mustard Osaka mustard is a strong japanese mustard, with beautiful purple highlights. It is one of the primary ingredients in making wasabi. It grows well to the baby salad stage and is delicious as microgreen or baby salad green. Try as a fresh garnish with sushi instead of wasabi. Red Giant Mustard Beautiful green leaves with purple highlights and a strong spicy mustard flavor make this japanese mustard a great choice for any micro salad.
6 Southern Giant Mustard Another oriental mustard with a stronger mustard bite that other oriental mustards. Makes a great choice for sandwiches or garnishes. Colorful green leaves with reddish highlights. Feather Red Mustard This petite mustard microgreen has a great flavor for garnishes or to add a little kick to any salad. Feather Red mustard is green and light purple in color and has a spicy mustard flavor. This is a great microgreen choice for sandwiches or garnishes. A more exclusive and expensive seed and produces a smaller green. (Media: Hydroponic - Microgreens; not grown as baby salad) Yellow Mustard Yellow Mustard is a regular run of the mill yellow mustard. It has a mild flavor, it's a great choice among the mustards, and is priced lower because of its inexpensive seed. (Media: Hydroponic - Microgreens Only)
