1 Volume 29 Issue 43 October 25, 2018 Item of the Week: GREEN BEANS Green beans are members of the common bean family, Phaseolus vulgaris, and are a popular part of diets around the world. There are slight variations in the shape in different areas of cultivation and green beans may be called by different names, including French beans, fine beans, string beans, or even squeaky beans, depending on where you are eating them. There are approximately 150 varieties of green beans throughout the world that come in all shapes and colors, even purple! Despite the variable appearance of the beans, their nutritional content and health benefits remain similar. Health Benefits of Green Beans Fresh green beans are very low in calories (31 calories per 100 g of raw bean pods) and contain no saturated fat. Nevertheless, these lean pod vegetables are an excellent source of vitamins, minerals, and plant derived micronutrients. The beans are a very rich source of dietary fiber (9% per 100g RDA) which acts as a bulk laxative. Fiber helps to protect colon mucosa by decreasing its exposure time to toxic substances as well as by binding to cancer-causing chemicals in the gut. An adequate amount of fiber in the diet has also been shown to reduce blood cholesterol levels by decreasing reabsorption of cholesterol-binding bile acids in the colon. Green beans contain excellent levels of vitamin-a, and health promoting flavonoid poly phenolic antioxidants such as lutein, zeaxanthin, and β -carotene in right amounts. These compounds help act as protective scavengers against oxygen-derived free radicals and reactive oxygen species (ROS) that play a role in aging and various disease processes. Zea-xanthin, an important dietary carotenoid in the beans, selectively absorbed into the retinal macula lutea in the eyes where it thought to provide antioxidant and protective UVlight filtering functions. It is, therefore, green beans offer some protection in the prevention of age-related macular disease (ARMD) in the older adults. Snap beans are an excellent source of folates. 100 g fresh beans provide 37 µg or 9% of folates. Folate along with Vitamin B-12 is one of the essential components of DNA synthesis and cell division. A good folate diet, when given during preconception periods and pregnancy, may help prevent neural-tube defects in the newborn babies. They also carry good amounts of vitamin-b6 (pyridoxine), thiamin (vitamin B-1), and Vitamin- C. Consumption of foods rich in Vitamin-C helps the body develop resistance against infectious agents and scavenge harmful oxygen-free radicals. Moreover, they contain healthy amounts of minerals like iron, calcium, magnesium, manganese, and potassium, which very essential for body metabolism. Manganese is a cofactor for the antioxidant enzyme, superoxide dismutase, which is a very potent free radical

2 scavenger. Potassium is an important component of cell and body fluids that helps controlling heart rate and blood pressure. Storage and Selection of Green Beans Raw fresh green beans, also called as snap beans or French beans, should be tender, long, stiff, but flexible and give snap sound when broken. Buy them from organic stores for their delicious beany flavor. Avoid limp or over matured beans with tough skin. To store, place them in a perforated plastic bag and keep in the refrigerator set at high relative humidity. They keep well for up to a week. Recipe (Source: Allrecipes.com) LEMON PEPPER GREEN BEANS Ingredients: 1 pound fresh green beans, rinsed and trimmed 2 tablespoons butter 1/4 cup sliced almonds 2 teaspoons lemon pepper Directions: 1. Place green beans in a steamer over 1 inch of boiling water. Cover, and cook until tender but still firm, about 10 minutes; drain. 2. Meanwhile, melt butter in a skillet over medium heat. Saute almonds until lightly browned. Season with lemon pepper. Stir in green beans, and toss to coat. GREEN BEANS WITH CHERRY TOMATOES Ingredients: 1 1/2 pounds green beans, trimmed and cut into 2 inch pieces 1 1/2 cups water 1/4 cup butter 1 tablespoon sugar 3/4 teaspoon garlic salt 1/4 teaspoon pepper 1 1/2 teaspoons chopped fresh basil 2 cups cherry tomato halves Directions: 1. Place beans and water in a large saucepan. Cover, and bring to a boil. Set heat to low, and simmer until tender, about 10 minutes. Drain off water, and set aside. 2. Melt butter in a skillet over medium heat. Stir in sugar, garlic salt, pepper and basil. Add tomatoes, and cook stirring gently just until soft. Pour the tomato mixture over the green beans, and toss gently to blend.

3 Organic Produce BEETS: Beets will continue to see insect pressure to the tops as well as yellowing on the tops. BROCCOLI: We are starting to see some variable pricing out west. Aphids are affecting some older crops but we have moved away from those suppliers. BUNCH CARROTS: Good supply available and good quality. CABBAGE: Supply has been stable and we are moving up to supply from Ohio, Wisconsin and Canada. CAULIFLOWER: Supply is getting much better and we are seeing pricing come off; we should see some promotional pricing coming around soon. CELERY: Supply is very stable for the moment but as we get closer to Thanksgiving, we are getting word that supply will tighten up. CUCUMBERS: Regional supply will be spotty at best. Product in the southeast is coming in on the smaller side and showing some increased scarring. We will continue to pull product from out west to ensure proper sizing. GREEN PEPPERS: Supply has moved to Georgia, Florida and South Carolina. KALES: Great supplies of kale currently; plenty of regional product from all over the Midwest available. We are currently sourcing from Georgia and North Carolina. LETTUCES: Inbound quality is getting much better out west, but we will still see insect pressure as we continue to transition growing regions out west. Canadian growing regions have finished out for the season. RADISHES: Supplies are impacted by weather out west as heat has really affected what supply is available. We are starting to get product out of Florida that will increase supply and quality. YELLOW SQUASH & ZUCCHINI: We are seeing great supply on zucchini squash, with yellow being a bit more limited. Supply is currently coming out of Georgia, Florida and South Carolina. Western Vegetables AVOCADOS: Steady volume out of Mexico; markets decreasing slightly with the current influx of product. Mexican volume will steadily increase; look for good overall supply situation lending to good promotion opportunities in November. Fruit sizing running toward heavier. BROCCOLI & CAULIFLOWER: It does look like there will be an active market on broccoli and cauliflower through the holiday and transition. There will be a few shippers delayed a few weeks due to flood damage in Yuma from the last hurricane. We look to be in good shape with product availability. CELERY: Finally a market!!! It only took a year! Production numbers are light due to Salinas already ramping down and Oxnard estimated to start November 5 th. Shippers will start filling their cheeks to build inventory for Thanksgiving. Open market celery will be very light during the holiday pull and will demand good money. Quality has been very nice for the past few weeks. ICEBERG LETTUCE: Markets getting active due to early transition for some to Huron and chasing weights in both areas. Average weights industry-wide seem to be hovering around 37-38lbs. We will finish in Salinas this weekend and be solely Huron for 10 days with Yuma slated to begin November 7 th. We will be able to load lettuce in Salinas next week for consolidation purposes but will have $1.10 upcharge for the transfer. Quality out of Huron is strong. ROMAINE/ROMAINE HEARTS/MIXED LEAF: Romaine (liner & heart) market is getting active with some shippers short and processors trying to buy acreage. Should see this market remain active through Thanksgiving. Green

4 and Red are plentiful with decent markets. Expecting a little more activity on these items in the next week. Transition to Yuma start dates Romaine November 15 th and Mix November 19 th. Salinas to end November 26 th. Value-Added The supply of raw product in the Salinas Valley, Midwest and Canada is declining as the weather turns colder and the amount of sunlight decreases as the days get shorter. Most processors and growers are getting ready to transition their operations to Huron, California and then to the desert growing areas for the winter. Expect some occasional supply issues during this transition time. Southern Vegetables The local vegetable deal is all but finished for the season. CABBAGE: Michigan cabbage will still be available for a few more weeks at best. CORN, CUCUMBERS, EGGPLANT, GREEN PEPPERS, YELLOW & ZUCCHINI SQUASH: From Florida and Georgia. GREENS: Still coming from Michigan. ONIONS: Western onion market is steady. RADHISHES: Cello radish from Ohio. Asparagus Peru volume remains steady with good solid quality. Mexican grass beginning to pick up steam; will see steady volume increase out of Mexico over next few weeks which will lead to good timeframe for promotions. Organic asparagus now in solid volume and market cost has eased slightly. Fruits APPLES & PEARS: Supplies and quality of apples coming from Washington remain good and should continue for the foreseeable future. East coast apples are still holding strong; Midwest apples are presenting new crop Fuji s and New York crops are now yielding new crop Honeycrisp. West Coast is starting new crop organic Braeburn, Snap Gala, Snap Granny, Snap Fuji, Autumn Glory, organic Cameo and organic Asian pears. New Variety Ciders are now available! Pumpkin Spice Cider, Honeycrisp Cider, Gala Cider and Sweet Tango Cider. BLACKBERRIES: Blackberries are in good supply but keeping an eye on Hurricane Willa as it makes landfall; will definitely impact mixed berry supply and push costs upward. The heavy rainfall will impact quality on arrivals. BLUEBERRIES: Volume increase from Peru and Argentina have steadied costs and starting downward trend. Ad opportunities just around the corner in November. Organic blueberries still remain limited until fully into November. CANTALOUPES & HONEYDEW: With California finished, last section of domestic cantaloupes coming out of Central Arizona, but recent rains has kept production very light and in the short term, will prevail and keep market strong. Honeydews are steady and with Mexican dews crossing, market has slide slightly lower. GRAPES: Peak grape time continues out of Prime Central California. Many new red and green seedless have started with great size. First shipment of the ever popular Holiday red seedless have arrived and available on guides this week and will be a key new item for the 1 st weeks of November; great new addition for your departments. Organic supplies also very robust and prime ad item for this period of time. Take advantage.

5 PINEAPPLES: Steady supplies but some weather conditions in prime growing regions have tightened supplies through mid October. RASPBERRIES: Little change in raspberries but Hurricane Willa after effects could impact and hamper supplies out of the central Mexico berry producing region. Both conventional and organic product will be affected by this limited inbound supply. STRAWBERRIES: The strawberry market is starting to rebound as we move into the Santa Maria and Oxnard region but markets are starting to firm upward. Strawberry sizing is running slightly to smaller end with counts ranging with occasion bruising. Tropical Fruit BABY FRENCH BEANS: Good supplies; steady market at lower end. KIWI: Steady supplies. LIMES: Prices has firmed up and increased on some sizes with better demand this week. Size 200 and large remained limited. Overall quality is very nice. MANGOES: Conventional mangoes becoming limited as Mexico season comes to close; new crop out of Brazil available but costs are strong. Organic mangos also starting to jump significantly in price as the market continues to shrink. Would expect to see tight supplies on organic mangos through September with a month long gap beginning in October until imports start out of Brazil and Ecuador. MARIDOL PAPAYAS/ GOLD PAPAYAS: Volume beginning to increase with hotter weather in growing region. STAR FRUIT: Good supply; sizing ranging from 20/25ct. SUGAR SNAP PEAS/SNO PEAS: Snow peas market at bottom; great deal. Sugar snaps down from previous weeks; best quality comes out of Peru but at a high price. Merchandising Tips What a great time it is to step back and take a look at your department! Are we ready to impress customers for Thanksgiving and Christmas, which are around the corner? Do we have fall baking displays up? How many items are we carrying (variety count) compared to our competitor? Are we doing demos, samples and cross department merchandising? Have we increased our displays on snacks, chocolates and candy? Are our departments clean, well signed and decorated? If you follow all of these things, your sales will increase noticeably.
